How to choose fresh, clean, and safe chicken
For live chickens:
- Good chickens are those that are still active. Do not choose those that appear lethargic or move sluggishly as they are likely to be sick.
- A healthy chicken with good meat will have smooth, shiny feathers that are very eye-catching. In contrast, sick chickens will have slightly damp, ragged feathers.
- You should not buy chickens that show abnormal signs on the head such as foam coming from the corners of the eyes, runny nose, nasal congestion, or wheezing.
For processed chickens
- Good chicken meat will have a characteristic golden-yellow skin color, with a thin outer layer that feels smooth to the touch and has good elasticity.
- Good chicken meat has a natural pink color. Do not choose meat that is too pale or has a grayish tint as this indicates that the chicken died before being processed. Especially avoid meat with bruises or blood spots.
- When buying pre-processed and packaged chicken, you should pay attention to the packaging date and expiration date, whether the packaging is intact, and if the labels are torn or stuck over.

- Shape: You should choose fruits that are round and evenly shaped, with a balanced appearance, slightly rough skin that is a bit bumpy. On the fruit’s body, there are two small dented marks resembling coins, with bright green leaves firmly attached to the top of the fruit.
- Color: Choose oranges with a naturally smooth, shiny outer skin, not overly glossy and not too rough. If they are naturally sweet, the yellow color will spread from the bottom to the top of the stem.
- Weight: Depending on the type of orange, the weight will correspond to its specific ripeness. You should buy fruits that are medium-sized, not too big or too small, feeling firm and heavy in hand, indicating they have more juice and sweetness.
How to prepare Orange Chicken

Prepare and marinate the chicken
To eliminate the natural odor of the chicken, you need to rub salt thoroughly on the chicken meat for about 10 minutes and then rinse it with clean water.
After the chicken is drained, use a knife to cut the chicken into bite-sized pieces and place them in a bowl.
Next, marinate the chicken with 1/2 tablespoon of salt, 1/3 tablespoon of garlic powder, 1/3 tablespoon of onion powder, 1/3 tablespoon of sesame oil, 60g of cornstarch, 5g of baking powder, and 1 egg white.
Place the chicken in a zip bag (food storage bag) for easier mixing of the ingredients, then refrigerate for about 30 minutes to 1 hour.

Prepare the oranges and other ingredients
Wash 2 oranges thoroughly, dry them, cut them in half, and squeeze out 120ml of orange juice.
Peel and finely chop the ginger. Trim the roots and wilted leaves from the green onions, wash them, and chop them finely.

Fry the chicken
After marinating, take the chicken out of the refrigerator. Place a pan on the stove and heat 40ml of cooking oil over medium heat.
When the oil is hot, add the chicken to fry, turning it over to fry both sides until golden and crispy over low heat. Fry the chicken for about 10 – 15 minutes, then remove it to a plate.

Making orange sauce
Using the pan that you just fried the chicken in, add ginger and sauté for about 1 minute over low heat.
Next, add the fried chicken and stir for about 1 minute, then pour in the freshly squeezed orange juice. Add 1/2 tablespoon of monosodium glutamate, 1/2 tablespoon of seasoning powder, 1 tablespoon of soy sauce, and 1 tablespoon of sugar, and simmer the chicken over low heat for about 10 minutes.
After simmering for 10 minutes on low heat, the water will have reduced and the sauce thickened, so taste and adjust the seasoning as needed. Finally, sprinkle some chopped green onions on top, then turn off the heat. Transfer the chicken to a plate and serve with hot rice.
