Then, wash the chicken feet briefly with the juice of 1/2 lemon and some salt for about 3 – 5 minutes, then rinse a few times with clean water and drain.
With 1 green pepper, use your hands to separate the seeds into a bowl, then use a pestle to crush it. For ginger and lemon grass, wash them 1 – 2 times with water until clean, drain, and then use a knife to crush both.
Finally, peel the shallots and garlic, then mince them finely.

Blanching chicken feet
After preparing the ingredients, you place a pot on the stove with 1 liter of water, 1 teaspoon of seasoning powder, 1 piece of ginger, and 5 smashed stalks of lemongrass to boil on high heat.
When the water boils, you add 500g of prepared chicken feet to blanch for about 5 minutes. After that, turn off the heat, quickly remove the chicken feet and rinse them again with cold water, then let them drain.

Stir-fried Chicken Feet
You place a pan on the stove with 2 tablespoons of cooking oil, then add minced shallots, minced garlic, and crushed green pepper to sauté until fragrant. Next, you add all the blanched chicken feet, using chopsticks to stir-fry for about 3 minutes.
When the chicken feet have tightened up, you add 1/2 cup of water (rice bowl type), 3 tablespoons of ketchup, 2 tablespoons of chili sauce, 1 tablespoon of oyster sauce, 1 teaspoon of seasoning powder, and 1 tablespoon of sugar, mixing well with chopsticks, then cook for 5 – 7 minutes.
When the sauce thickens and seeps into the chicken feet, you add 1 tablespoon of chili powder and the remaining 2 stalks of green pepper into the pan. Stir well once more and cook for about 5 more minutes, then season to taste, then turn off the heat and serve on a plate to complete.
