Prepare the ingredients
Chicken feet should be cut in half, washed with lemon, salt, and ginger.
Peel the garlic and finely chop it along with the chili. Peel the ginger, wash it, and slice it. Next, cut the lemongrass by removing the leaves, peeling off the outer layer, and crushing it. Also, wash the lemon and calamondin, then cut them in half.

Boil the chicken feet
Place a pot on the stove, add about 1.5 liters of water. Next, add lemongrass, 1 spoon of salt, 1 spoon of monosodium glutamate, 3 calamondin fruits along with the prepared chicken feet, and boil for about 15 minutes.
After that, take the chicken feet out and place them in a bowl of ice water that has been prepared to soak for about 10 minutes to make the chicken feet crispier, then take them out and let them drain.
