Chicken feet 2 kg (10 pairs) Lemongrass 6 stalks Kumquat 17 fruits (sweet kumquat) Ginger 1 piece (small piece) Chili 7 fruits Vinegar 7 cups (rice cup) Fish sauce 1 cup (rice cup) Filtered water 2 cups (rice cup) Sugar 1 cup (rice cup) Salt 2 teaspoons

How to Choose Fresh and Delicious Chicken Feet

  • Prioritize choosing chicken feet that have a natural pink-white color, feel firm when held, with tight skin that has good elasticity.
  • In addition, fresh chicken feet usually feel dry to the touch, with 4 toes curling inward, and only puffing up when pressed firmly.
  • Do not buy chicken feet that are puffed up and appear unusually plump, as these might have been water-injected and will not taste good.
