Roasted peanuts 100 gr Sugar 200 gr Corn syrup 50 gr Lemon juice A little Cornstarch 500 gr

How to make Dragon Beard Candy

  • Crush the peanuts

    Put the roasted peanuts into a zip bag and crush them finely.

    If you want to speed things up, use the nut grinder of your multi-functional blender at this step!

  • Cook the syrup to make candy

    Add to the pot:

    • 100 ml water
    • 50 gr syrup
    • 5 gr lemon juice (about 1 teaspoon)
    • 200 gr sugar
    • A little food coloring (optional)

    Put it on the stove and cook on low heat. Note that you must not stir the mixture.

    When the mixture boils and large bubbles rise as shown, you have 2 ways to test if the syrup is ready:

    • Scoop a little into a bowl of cold water, wait 30 seconds, then try to pull a strand. If you can pull a long strand, it means it’s ready.
    • Use a thermometer to measure; when the mixture reaches 131 degrees Celsius, turn off the heat.

  • Cooling the candy

    After the mixture reaches the right consistency, pour it into a mold or spread it out on a non-stick silicone sheet.

    Divide the mixture into 2 separate parts, this recipe can yield 2 batches of candy.

    Let the candy cool for about 5 – 10 minutes.

  • Roasting cornstarch to pull the candy

    Put the cornstarch in a non-stick pan to roast. If you don’t like cornstarch, you can substitute it with potato starch.

    Roast the starch over medium heat for about 5 minutes.

    Pour the starch onto a tray to prepare for the candy pulling step.

    The candy from earlier should only be left to cool down a bit and still be slightly warm.

    Use a spoon to scoop a piece of candy from the dough sheet, then roll it into a ball.

    Make a hole in the center of the candy piece, then stretch evenly to make the circle larger.

    Continue to pull it out, then fold it in half and pull again until the candy turns into thin strands.

  • Roll the candy with peanuts

    Take a few strands of candy and stretch them out, sprinkle some peanuts on top, and roll them up.

    Tip: You can place the candy strands on your palm, add the peanuts, then use the back of a spoon to roll it up to shape the candy faster.

    Leave in the refrigerator for about 30 minutes before serving.
