Cake flour 60 gr Baking powder 1/2 tablespoon (raising agent) Baking soda 1/4 teaspoon Chicken egg 1 piece Melted butter 75 gr Granulated sugar 10 gr Vanilla extract 1/2 teaspoon Common seasoning a little (sugar/salt)

What is madeleine cake?

  • Madeleine cake, like the sweet young lady of France, originated in the 18th century and belongs to the basic gateau category with a slightly higher butter ratio in the traditional recipe.
  • Madeleine cake is made from simple ingredients such as: flour, butter, cream, eggs, and sugar.
  • The sweet and fragrant soft shell-shaped cake is the favorite breakfast of all French people.
  • The cake is so popular and loved that you can easily find a “pack” of Madeleine in any big or small supermarket without needing to be served in a five-star bakery.

The ingredients for the cake such as cake flour, baking soda, and baking powder can be easily purchased at baking ingredient stores or ordered on e-commerce sites.

How to make Chocolate Shell Cakes – madeleine chocolat

  • Mix the egg and sugar mixture

    You crack 1 egg into a bowl, then use a whisk to beat the egg until smooth. Next, add 60g of sugar, 1/4 teaspoon of salt, 1/2 teaspoon of vanilla extract, and mix the mixture for about 3 – 4 minutes until the eggs become frothy.

  • Mix the flour

    You gradually add 55g of cake flour, 13g of cocoa powder, 1/2 teaspoon of baking powder, and 1/4 teaspoon of baking soda into a sieve, then sift the flour into the egg mixture.

    Next, use a whisk to mix the mixture for about 3 – 4 minutes, add 75g of melted butter, and mix for another 5 – 6 minutes until you lift the whisk and the flour becomes thick and forms peaks.

    Finally, cover the bowl of flour tightly with plastic wrap and place it in the refrigerator for about 30 minutes.

  • Pour into Molds and Bake

    Spread a layer of butter on the madeleine molds and sprinkle a thin layer of cake flour evenly over the bottom of the molds, then invert the molds and gently tap to let the excess flour fall out.

    Place the batter into a piping bag and carefully pipe the batter into the molds.

    Note: Only add enough batter so that when baked, the cakes rise perfectly.

    Next, stabilize the oven temperature at 170 degrees Celsius for about 10 minutes. Then, place the molds in the oven at 170 degrees Celsius for 15 minutes to achieve the desired result.

    After the time is up, take the cakes out and sprinkle a little powdered sugar on top to complete the chocolate madeleine recipe.

Successful execution tips

  • If you don’t have a madeleine mold, you can use a cupcake mold. You should lower the baking temperature to about 165 – 170 degrees Celsius and increase the baking time to 25 – 30 minutes, depending on the height of the batter in the cupcake mold.
  • The baking temperature in the recipe may vary depending on the oven. For smaller ovens, you should reduce the temperature to avoid burning the outside of the cake while the inside is not cooked enough.
  • A standard cake will be very soft and light, with a smooth, airy, and fragrant buttery crumb. If the cake is hard, has a dense or dry crumb, or is not smooth, the reasons may include: the eggs were not whipped enough, it was not baked for a sufficient time, the cake was baked at too high a temperature (causing the outside to burn while the inside is undercooked), or it was baked at too low a temperature for too long, causing the batter to dry out.
