1 How to fry banh chung using an air fryer

Ingredients and tools

  • 1 piece of banh chung
  • Oil spray (or brush)
  • Air fryer
  • Knife

  • The frying basket of the fryer is spacious enough to fit a whole chicken weighing 1.5kg or 2 pieces of 500g ribs, meeting the cooking needs for a family of 4.
  • The fryer has a mechanical knob control panel that is easy to operate, allowing you to adjust the temperature from 80 – 200 degrees Celsius and set a timer for up to 60 minutes.

Steps to follow

Step 1: Cut the square sticky rice cake

To make it easier to cut the square sticky rice cake, you should put it in the cool compartment of the refrigerator for 1 day. After taking the cake out of the refrigerator, it will be firmer and easier to cut with a knife.

You can wrap the knife blade with plastic wrap or apply a layer of cooking oil on the knife and then cut the cake into thick or thin slices as preferred. If you like crispy cake, cut it into 1 cm thick slices; if you want it crispy on the outside and soft on the inside, cut it into 2 cm thick slices.

Tip: If you haven’t had time to put the cake in the refrigerator, you can also use the string used to wrap the cake to cut it.

You preheat the air fryer to 180 degrees Celsius for 5 minutes, then take out the frying basket, spray a thin layer of oil on the bottom of the basket using an oil spray bottle or brush to prevent sticking.

Next, you place the slices of sticky rice cake in the frying basket. If your cake is quite dry and has little filling, you should spray an additional layer of cooking oil on the surface so that when frying, the cake will be crispier. Conversely, if your sticky rice cake has a lot of fatty meat, you may not need to apply more oil.

You attach the frying basket to the pot, set the temperature to 200 degrees Celsius and the time to 15 minutes. After 15 minutes, you pull out the frying basket to check the cake. If the cake is golden and crispy as desired, you can take it out onto a plate. If you want the cake to be even more golden and crispy, you can flip the cake over and fry it for an additional 5 – 10 minutes.

Tip: If your air fryer is a small type with a capacity of under 3 liters, you should lower the frying temperature to 180 degrees Celsius and check frequently to prevent the cake from burning.

Fried sticky rice cake using an air fryer will have a beautiful golden outer layer, crispy texture, and less oil. You can dip this dish in chili sauce or enjoy it with pickled vegetables or shallots, which is also very delicious.

  • If your sticky rice cake is dry, steam it again or spray a little water before frying to make it softer. When frying, the cake will not become too dry and hard.
  • To enhance the flavor of the fried sticky rice cake, you can mix a little fish sauce with cooking oil, then brush a thin layer on the cake before frying.
  • You should spread the cakes evenly on the frying tray, avoiding stacking them on top of each other. This will help the cakes cook evenly and achieve a crispy outer layer.
  • If you want the fried sticky rice cake to be crispy on the outside but still soft and delicious on the inside, fry it in two batches: the first at 180 degrees Celsius for 15 minutes, and the second at 200 degrees Celsius for 2 – 3 minutes.
  • You should enjoy the cake while it’s still warm to fully experience the crispy and delicious flavor. Do not let the cake cool down as the outer layer may harden and lose its initial taste.
