Pineapple 1 fruit Sugar 30 g All-purpose flour 150 g (type 11 flour) Unsalted butter 120 g Egg yolk 1 piece Condensed milk 35 g

How to choose a delicious pineapple

  • Color: you should choose fruits that have a bright yellow color from the stem to the tail, there may be a few eyes that are slightly green, but it will still have a certain sweetness.
  • Shape: Round and short pineapples will have more flesh than long ones.
  • Pineapple eyes: Choose fruits with large, sparse eyes because this indicates that the pineapple is mature and naturally ripe, not chemically treated.
  • Smell: you can try smelling the end of the fruit; if it has a fragrant smell, you should buy it. Also, do not choose fruits that have a slightly sour smell like fermentation, as those pineapples are overripe.
  • Pineapple crown: The greener the crown, the fresher the pineapple. Overripe pineapples will have a dry or brownish crown.
  • Touch: A good, fresh pineapple will not be too hard or too soft; when you press your finger into it, there should be no indentation.

  • Prepare the pineapple

    Peel the pineapple, wash it clean, remove the core, then cut it into small pieces.

    Tip for quick pineapple cutting:
    • First, cut off both ends of the pineapple, then stand the pineapple upright and peel it from top to bottom.
    • Next, cut it in half, making a V-shaped cut to remove the tough core in the middle of the pineapple.

    Crush the pineapple, then put it into a non-stick pan to cook with 30g of sugar over low heat.

    When the pineapple filling thickens into a sticky mass and the pan is dry, it is done.

  • Mixing the Cake Dough

    Put 120g of unsalted butter, 35g of condensed milk, and 1 egg yolk into a bowl and stir well with a spoon.

    Next, sift 150g of flour into the mixture, then mix well until it forms a cohesive dough.

    Wrap the dough tightly in plastic wrap and refrigerate for 40 minutes.

  • Shaping the Pineapple Cake

    Divide the dough and filling into 10 equal parts and roll them into balls.

    Flatten the dough, place the filling in the center, and then roll it into a ball.

    Dust the mold with a little flour, place the cake inside, press to shape, and use a razor blade to make a few cuts for decoration.

  • Baking the cake using an air fryer

    Preheat the air fryer to 180 degrees Celsius for 10 minutes.

    Brush a thin layer of egg on the cake, then place it in the fryer to bake for 10 minutes at 160 degrees Celsius.

    After 10 minutes, flip the cake and bake for another 10 minutes.

    The pineapple cake has an eye-catching golden brown color, with a soft, sweet, and buttery crust, and a chewy, sweet, and sour pineapple filling inside, very delicious.
