How to make Yogurt Sponge Cake with an air fryer

Mix the egg yolk mixture
Separate 3 egg yolks and put them in a bowl with 40g of sugar, 30ml of fresh milk, 100g of yogurt, and 50g of melted butter. Use a whisk to mix until the mixture is well combined.

Mix the cake flour
Sift 60g of wheat flour and 40g of cornstarch into the yolk mixture, stir well until it becomes a thick, smooth mixture with a light yellow color.

Whip the egg whites
Add 3 egg whites into a bowl, use a whisk to beat until the egg whites are frothy.
At this point, add ¼ teaspoon of salt, lemon juice, and continue to whisk well.
Divide 40g of sugar into 3 parts, adding each part one at a time, whisking until dissolved before adding the next part. Whip vigorously until the egg whites are soft, with a creamy texture, the mixture is sticky, glossy, and smooth. Lift the whisk to form stiff peaks that bend down slightly to indicate it’s done.
Note:
- The egg whites should be at room temperature before whipping.
- You can use an electric mixer to save time and adjust the speed from low to high!

Mix the cake batter with the egg whites
Add 2 portions of whipped egg whites into the yolk mixture, then gently stir to combine.
Next, pour the mixed batter back into the bowl of egg whites and gently fold the mixture from bottom to top. Bring the spatula down to the bottom of the bowl, lift the heavy ingredients up, and fold them to the side. Continue this process until the mixture becomes smooth.
Note: Do not stir vigorously as it will break the small air bubbles, causing the cake not to rise. -
Pouring and baking the cake
Line with parchment paper, spread a thin layer of butter all over the mold, then pour in the batter. Gently tap the mold on the table to spread the batter evenly.
Preheat the air fryer to 160 degrees Celsius for 10 minutes, then put the cake in to bake for 30 minutes.
