How to choose fresh ingredients
How to choose safe, quality chicken
For live chickens
- Choose those with bright red combs, lively eyes, and agility. The chicken’s feathers should be smooth and close to the body, the beak sharp, small, and with no signs of discharge.
- The chicken’s legs should be small, neat, and the skin a uniformly bright yellow. When you part the feathers, the skin should be soft, thin, and have some large yellow patches under the armpits and on the breast.
- Avoid buying chickens with ruffled feathers, looking dejected, or having a foul smell, as these may be sick chickens, which will not taste good.
For pre-processed chickens
- You should choose chickens with uniformly yellow meat and a darker color in areas like the wings, breast, or back. Chickens usually have a compact, firm body and a narrow breast.
- Pre-processed chickens typically have smooth, thin skin, a certain degree of elasticity, and are not bruised or have dark purple spots.
- Avoid buying if you see chicken meat that is dull in color, soft, oozing, and has a foul smell, as it will not be safe to eat.
How to choose fresh cabbage
- Good cabbage has a round, uniform shape, a slightly dark green color, and the outer leaves are still fresh and not bruised.
- You should choose cabbage that feels a bit heavy when you pick it up, giving a firm feel, with moderate size and weight.
- Avoid buying cabbage that is flat or oval-shaped, has a light color, is too light in weight, and has wilted or yellowing outer leaves, as this indicates old cabbage that is not fresh.

How to choose the right carrots
- Delicious carrots have a moderate size, straight elongated shape, smooth skin, and feel firm and heavy when held.
- It is advisable to choose those with fresh green leaves still attached firmly to the root, as these are fresh, newly harvested carrots.
- Carrots with a deep orange color and small core will have a sweeter taste compared to those with a large core and lighter color.
- Avoid buying carrots that are too large, have a big core, or thick shoulders, as these are older carrots and not tasty. Additionally, do not buy carrots that are soft, wilted, or misshapen.
