    To eliminate the fishy smell of the meat, wash the meat thoroughly and blanch it in boiling water with a little salt for about 3 – 5 minutes. After blanching, rinse the meat well and use a meat grinder to grind it finely for about 5 minutes.

    Soak the wood ear mushrooms in cold water for about 10 minutes until they are fully expanded, rinse them, and then cut them into strips. For the carrot, remove the stem, peel it, shred it thinly, and then cut it into pieces about 1/2 finger length.

  • Prepare the meat filling

    Put the pork, corn, wood ear mushrooms, carrots, green onions, and red onions that have been prepared into a large plate, then gradually add 2/3 tablespoon of sugar, 1 tablespoon of seasoning, 1/3 tablespoon of monosodium glutamate, 1/3 tablespoon of ground pepper, and crack one chicken egg into it.

    Mix well and then cover tightly with plastic wrap to marinate for 30 minutes.

    If your rice paper is too hard, you should brush a little water on it to soften the rice paper, making it more flexible and easier to roll.

    First, place 1 tablespoon of the meat filling at one corner of the rice paper, fold the two sides of the rice paper in, and then roll it tightly so that it doesn’t come apart. Continue to do this with all the filling you have prepared to avoid waste.

    Place a pan on the stove, heat 200ml of cooking oil over medium heat. When the oil is hot, gradually add the rolls and fry until golden brown on both sides over low heat for about 10 minutes.
