Prepare the Shrimp
Wash the land shrimp, remove the head, peel off the outer shell, and remove the black vein on the back of the shrimp, remembering to leave the tail intact (if the shrimp is too large, cut it in half for easier wrapping).
Marinate the shrimp with 1/2 teaspoon of salt, sugar, and a little pepper, then refrigerate for 10-20 minutes to absorb the seasoning.

Making fried spring rolls
50 grams of minced purple onion sautéed until golden with a little cooking oil.
Then, add the sautéed onion to 150g of minced meat. Season the meat with 1 teaspoon of seasoning, 1/3 teaspoon of pepper, and 1 tablespoon of sugar, mixing well.
Wrapping the fried spring rolls: Lay one rice paper on the cutting board, dampen it with a little water, then add a bit of minced meat to roll it up. Near the end of the roll, add one earth shrimp and continue to roll.
