How to choose fresh, quality salmon
- You should choose salmon fillet that has a bright pink or orange color, with a firm texture, and when pressed, the flesh should indent but quickly return to its original state.
- Additionally, you should select salmon that has evenly colored fat lines, a dry surface, no slimy residue, and especially, has the characteristic smell of salmon.
- Avoid choosing salmon fillet that is dark or dull in color, lacks elasticity, has many brown spots on the flesh, and has an unusual odor as it may be spoiled fish.
How to make Crispy Fried Salmon

Prepare the ingredients
Fillet salmon bought should be rinsed with diluted salt water and then washed clean with water, using a towel to pat the fish dry. Use a knife to cut the fish into small square pieces and put them into a bowl.
How to clean salmon, without fishy smell- Method 1: Soak the salmon in a mixture of lemon juice and salt mixed with water, stir well for about 1 minute, then take the fish out and wash it clean with water, pat dry with a towel, and it’s ready to cook.
- Method 2: Soak the salmon in fresh milk for about 10 minutes, then rinse with clean water and let it drain.
- Method 3: Soak the fish in a mixture of white alcohol (vinegar) and minced ginger for about 7 – 10 minutes, then take it out and wash it clean with water, letting it drain.

Onion peeled, washed, and diced. Green onion washed, cut into pieces about 2cm long. Bell pepper washed and sliced thin.

Marinate the fish
You put 2/3 spoons of salt, 1 spoon of sugar, 1/2 spoon of garlic powder along with 1/2 spoon of onion powder into the bowl of salmon, then mix well with your hands.
To let the fish absorb the seasoning evenly, you marinate the fish for about 30 minutes, then add 1/2 of the egg white and mix well.

Dust the fish with flour
You slowly sprinkle 60g of cornstarch while mixing continuously until the flour is all used up.
Tip:- If you don’t have cornstarch, you can use potato starch or crispy batter flour.
- You can increase or decrease the amount of cornstarch as you like!

Frying Fish
Place a pan on the stove, add about 300ml of cooking oil to the pan and heat it until boiling. When the oil is hot, use chopsticks to gently place the fish pieces in and fry over medium-high heat for about 3 minutes.
When one side of the fish turns golden, flip it over and continue frying for another 1 – 2 minutes, then turn off the heat and place the fish on a plate lined with paper towels to absorb the oil.

Stir-Frying Fish with Onions
Put a pan on the stove with 1 teaspoon of cooking oil and heat it over medium heat. When the oil is hot, add minced garlic and sauté until fragrant.
When the garlic is golden and fragrant, add the diced onions and stir briefly, then add all the crispy fried salmon and stir well for about 30 seconds.
Next, add the green onions and bell peppers, stir briefly for another 15 seconds, then turn off the heat. Transfer the fish to a plate, and garnish with a few slices of chili for added color.
