- Avoid buying carp with a swollen belly, as it indicates a lot of fat or eggs, which makes the meat less sweet.

Prepare the carp
To remove the fishy smell and clean it, gently rub the carp with salt for about 5 minutes, then rinse it thoroughly with water.
Proceed to use a knife to fillet the fish and use tweezers to remove the bones.
Methods to clean fish and remove the fishy smell- Method 1: Soak the fish in rice water for about 15 – 20 minutes and then rinse it clean to effectively remove the fishy smell.
- Method 2: Rub the fish with salt for about 1 minute and then rinse clean or soak the fish in diluted salt water for 5 minutes and then rinse with clean water. Salt helps both remove the fishy smell and clean the slime on the fish’s skin.
- Method 3: Dilute alcohol (or lemon juice or white vinegar), soak the fish for 5 – 10 minutes, then rinse clean and it can be processed.

Marinate the fish and prepare the batter
Put the fish into a bowl along with 1/2 tablespoon of monosodium glutamate, 1/2 tablespoon of salt, 1/2 tablespoon of seasoning powder, 1/2 tablespoon of pepper, 1/3 tablespoon of sugar, and mix well.
Cover the bowl tightly or use plastic wrap to seal it. Place the bowl of fish in the refrigerator for about 30 minutes to let the fish absorb the spices.
Put 120g of batter mix into another bowl, then slowly pour in 150ml of water, stirring while pouring to avoid clumps. Continue to stir gently until the batter is completely dissolved.

Frying Fish
Place a pan on the stove (it is better to use a deep, non-stick pan), add 200ml of cooking oil to the pan. Roll the fish in the flour mixture that has been mixed with water beforehand.
When the oil is hot, lower the heat to medium, add the floured fish and fry lightly for 3 minutes. Remove the fish to a plate and fry until all the fish is done.
Continue to roll the fish in the flour for a second fry. Fry on medium heat for 2 minutes on each side to finish.
