How to choose fresh and delicious carp
- Usually, when buying carp, you should buy live fish to ensure freshness. Good fish has a thick, even body from head to tail. The scales are shiny and smooth, with no dark spots or unusual marks.
- Long, slender carp are wild carp, which will be tastier than farmed fish that are round and fatty.
- Avoid buying carp with a bloated belly, as these are usually fish that are fatty or have eggs, resulting in less sweetness in the flesh.
- If you can’t buy live fish, check if the head still has fresh blood, the eyes are clear, the flesh looks fresh and elastic, and there’s no foul smell, no watery leakage, or mushiness, which indicates it’s fresh and just slaughtered.

Proceed to use a knife to fillet the fish and use tweezers to remove the bones.
How to Clean Fish and Remove the Fishy Smell- Method 1: Soak the fish in rice water for about 15 – 20 minutes and then rinse to effectively remove the fishy smell.
- Method 2: Rub the fish with salt for about 1 minute and then rinse or soak the fish in diluted salt water for 5 minutes and then rinse with clean water. Salt helps to eliminate the fishy smell and clean the slime on the fish’s skin.

Marinate the fish and prepare the batter
Put the fish into a bowl along with 1/2 tablespoon of monosodium glutamate, 1/2 tablespoon of salt, 1/2 tablespoon of seasoning powder, 1/2 tablespoon of pepper, 1/3 tablespoon of sugar, and mix well.
Cover the bowl tightly or use plastic wrap to seal it. Store the bowl of fish in the refrigerator for about 30 minutes to allow the fish to absorb the spices.
Put 120g of crispy batter mix into another bowl and slowly pour in 150ml of water, stirring continuously to prevent clumping. Continue to stir gently until the batter is completely dissolved.
-
Fry the fish
Place a pan on the stove (it is best to use a deep and non-stick pan), pour 200ml of cooking oil into the pan. Roll the fish in the flour mixture that was previously mixed with water.
When the oil is hot, reduce the heat to medium, and fry the coated fish for 3 minutes. Remove the fish to a plate and fry until all the fish is cooked.
Continue to roll the fish in the flour for a second fry. Fry on medium heat for 2 minutes on each side until done.
Remove the fish to a plate, and when eating, dip it in chili sauce or ketchup to enhance the flavor!
Tip: Frying a second time helps the batter stay crispy longer without the fried fish becoming soggy. -
Final Product
The outer layer of batter is crispy, the fish meat is tender, juicy, and infused with rich spices, making it very appealing. The fried carp coated in batter can be enjoyed as a snack, a side dish, or served with rice, and it tastes great!
