  • Fresh eggplants are those with a bright purple skin that looks smooth and shiny without any unusual blemishes or dark spots.
  • Additionally, check that the stem is still fresh and green, firmly attached to the body, and not separating. When pressed lightly, the eggplant should have a moderate softness, not bruised or mushy.
  • You should avoid buying overly hard eggplants as they are mostly overripe and will not taste as good. Particularly, they may emit a strong chemical smell as they might have been sprayed with excessive pesticides for growth.

  • Prepare the eggplant

    First, take 1 eggplant, remove the stem, wash it directly under running water to clean it, and let it drain. Use a knife to slice it into thin rounds for easy eating.

    At the same time, soak all the sliced eggplant in a bowl of diluted salt water for 5 – 10 minutes, then wash it again with clean water and let it drain.

  • Prepare and marinate the egg

    You proceed to crack 1 egg into a bowl, while adding 1/3 teaspoon of salt, 1/3 teaspoon of ground pepper, 1/3 teaspoon of seasoning powder, and 1/3 teaspoon of sugar, then use chopsticks to beat well to dissolve the egg.

    First, you put 100g of crispy flour and 150g of breadcrumbs into 2 different bowls.

    Next, you take each slice of eggplant and coat both sides with the beaten egg, then with the crispy flour.

    Then, you continue to coat another layer of egg, and finally with the breadcrumbs. You keep doing this until you finish all the eggplant.

    You place a pot on the stove with 400ml of cooking oil and heat it over medium heat. When the oil starts to shimmer, slowly add the eggplant that has been coated in breadcrumbs and fry for about 10 – 13 minutes.

How to Make Fried Eggplant Rolls

  • Prepare the Ingredients

    Use a spoon to spread a layer of crispy batter on the eggplant, then place the filling at the top of the eggplant slice and slowly roll it up.

  • Dipping Sauce

    Add 1 tablespoon of soy sauce, 1 tablespoon of vegetarian seasoning, 1 teaspoon of sugar, 1 tablespoon of vegetarian oyster sauce, 1 tablespoon of cashew vinegar, 1 tablespoon of chili sauce, and 1 tablespoon of vegetarian fish sauce into a bowl and mix well.

    Heat a pan, sauté a little cooking oil with 1 tablespoon of minced ginger, then add the mixture prepared above into the pan. Cook on low heat until the sauce thickens, then add chopped cilantro and chili, and turn off the heat.
