How to choose fresh ingredients

How to choose fresh and hygienic pig’s stomach (belly)

  • Good pig’s stomach has a white or light pink color, bright color, thickness of 2 – 3 finger joints, and a certain elasticity.
  • Choose pig’s stomach that does not have hard grains inside, a lot of fluid, but is not slimy to the touch.
  • Do not buy pig’s stomach that is bruised, has dark spots or is pale green, with an unpleasant odor. Additionally, you should not buy frozen pig’s stomach, as it will lose its crispiness when cooked.

How to choose fresh Vietnamese coriander

  • You should choose fresh Vietnamese coriander, with small leaves, a distinctive aroma, not wilted, and without any strange smell.
  • Additionally, do not choose large, shiny Vietnamese coriander leaves as they are less fragrant and not as delicious as small-leaved ones.
  • Avoid choosing crushed or wilted Vietnamese coriander leaves to prevent affecting the flavor of the dish.

How to prepare Stir-fried Stomach with Vietnamese Balm

  • Prepare the ingredients

    Clean the stomach thoroughly with water, then turn it inside out and rub it well with salt to remove all the slime, then rinse again with water.

    Next, continue to wash the stomach with vinegar and rinse again with water. After the stomach is drained, cut it into several pieces lengthwise, about 3 large finger lengths.

    Pick out any wilted leaves from the Vietnamese balm, wash them clean, and let them drain.

    Tips for preparing and eliminating the odor of pig stomach

    • Step 1: Turn the stomach inside out, rinse it with water, then rub it thoroughly with salt, and rinse again.
    • Step 2: Use lemon juice to rub the pig stomach for an additional 5 – 10 minutes, then rinse clean.
    • Step 3: Boil a pot of water with a little salt (add ginger or white wine if available), blanch the pig stomach for about 1 minute, then remove it and soak it in cold water, scrape off all the white patches, wash clean, and let it drain.

  • Stir-fried stomach

    Place a pan on the stove with a bit of cooking oil; when the oil is hot, add the prepared stomach, 1 teaspoon of monosodium glutamate, and 1 teaspoon of seasoning powder. Stir evenly over medium heat until the stomach firms up.

    When the stomach is firm, add 1 teaspoon of vinegar and continue to stir until the stomach releases fat. At this point, add the Vietnamese coriander and stir until the herbs are wilted, then turn off the heat.
