Prepare the pig ears
To prepare and clean the pig ears, when you buy them, use a razor blade to scrape off the hair on the pig ears. Next, rub the meat surface with a mixture of salt mixed with 100ml of vinegar and 20ml of ginger wine for about 5 minutes, then rinse with clean water and let it drain.

Boiled Pig Ears
Place a pot on the stove and boil about 2 liters of water with 2 tablespoons of vinegar, 2 tablespoons of mai quế lộ wine, 2 stalks of lemongrass, and 20g of smashed ginger, along with an onion peeled and cut into 4 pieces.
When the water is nearly boiling, add the pig ears to the pot and boil until it reaches a boil, then reduce the heat. After that, add 1 teaspoon of baking soda. Boil the pig ears for about 30 minutes over medium heat until they are tender, then rinse them in cold water and let them drain.

After the pig ears have drained, use a knife to cut them into thin slices about the thickness of a finger.

Place the sliced pig ears into the air fryer and dry them at a temperature of 60 degrees Celsius for about 30 minutes.
After 30 minutes, stir the pig ears and continue to put them back into the air fryer to dry for another 30 minutes.
Tip:- You can use an oven in drying mode to dry the pig ears at a temperature of 50 degrees Celsius.
- Do not set the temperature higher as the pig ears will become tough and will not be crispy when fried.
- Drying will help the pig ears puff up and become crispier when fried again without splattering oil.
