How to choose fresh and delicious quails
- Female quails have a fatty taste, but male quails are softer to eat, so choose based on your preference.
- Fresh quails have a characteristic reddish-brown or pink color, not pale or dark, with tiny spots on the surface.
- You should also observe that good quails have a round, small head, a slightly short beak, and a streamlined, neat shape. Additionally, the wings are slightly pointed.
- When you touch them, they should feel firm, not too soft and mushy, as that indicates quails that have been kept for too long, which can affect health.
- If buying pre-processed quails, you should not choose them if there is a strange smell, bruising, or water leakage.

How to make Coconut Roasted Quails

Prepare the ingredients
Buy quails, cut them in half, clean the belly thoroughly, and then rinse and drain.
Peel and finely chop the shallots and garlic. Chop the coconut water from the young coconut.
How to clean quails thoroughly, without odor:
- Method 1: Use a mixture of white alcohol, crushed ginger, and salt to rub the quail for about 5 minutes.
- Method 2: Additionally, rubbing salt and vinegar on the quail is also very effective in eliminating odors.

Marinate the quail
Put the quail in a bowl and marinate with 1 tablespoon of seasoning, 1 tablespoon of fish sauce, 1 tablespoon of sugar, 1/2 teaspoon of pepper, 1 tablespoon of five-spice powder, minced shallots, and garlic, mix well, then wrap with plastic wrap to let the spices absorb for about 45 minutes.
Tip: To allow the quail to absorb the spices and be more flavorful, if you have time, you should marinate the quail overnight in the refrigerator.

Fry the quail
Heat a pan on the stove with 5 tablespoons of cooking oil over medium heat.
When the oil starts to get hot and bubble, add the quail and fry for about 10 – 15 minutes.
Fry for about 5 – 7 minutes, when you see the quail is golden, flip it over and fry until both sides are golden, then add the marinating liquid back in and continue to stir for another 2 minutes.

Roasted quail
Using the same pan that was used to fry the quail, add coconut water and roast over high heat for 5 minutes.
Once the coconut water boils, reduce the heat and continue roasting for another 5 – 7 minutes.
When the coconut water has reduced to about 2/3 of its original amount, add 1 tablespoon of fish sauce and 1 tablespoon of coloring oil, stir well, and season to taste.
Tip: To keep the dish flavorful when adding coconut water, if it’s too little, add more water so that the liquid covers the meat.

Completion
When the coconut water has reduced, continue to simmer on low heat for 10 – 12 minutes until it thickens, then add 1 tablespoon of honey, stir well for about 2 minutes, and turn off the heat.
Note:
- To ensure the quail absorbs the flavors, turn the quail regularly as the coconut water reduces.
- Honey can burn easily, affecting the dish’s flavor, so do not add it too early.
