After buying the squid, separate the head from the body, then remove the ink sac and digestive organs.
Use your hands to pull off the white backbone from the back of the squid. Then rinse the squid several times with water, and drain it in a basket. Cut the head into bite-sized pieces and slice the body into round rings about 1/2 finger thick, then place them on a plate.
