How to choose fresh squid

  • Fresh squid has a shiny color, the brown part is dark brown, and the milky white color has a clear contrast; when pressed, the squid body feels firm and has high elasticity.
  • Choose squid with clear, transparent eyes, where the pupil is visible, and the tentacles and other appendages are securely attached to the squid body.
  • Do not buy squid that looks dull, is soft and mushy, leaks fluid, or has a foul smell, as this indicates squid that has been stored for a long time and is not fresh.

How to make Crispy Fried Squid

  • Prepare the ingredients

    For the squid, separate the head from the body, then remove the ink sac and digestive organs. Use your hands to pull out the white backbone from the back of the squid.

    After that, rinse the squid several times with water, drain it in a basket, then cut the squid tentacles into bite-sized pieces, and cut the squid body into round slices about 1/2 finger thick.

    Crack the egg into a bowl, add 1/2 tablespoon of seasoning, and use chopsticks to beat the egg until well mixed.

  • Marinate squid

    Put the cut squid into a bowl along with a mixture of spices including: 1/2 teaspoon ground pepper, 1/2 tablespoon seasoning granules, 1/2 teaspoon monosodium glutamate, 1/2 teaspoon sugar, mix until the spices are evenly absorbed by the squid, marinate for about 15 minutes.

    Put 100g of crispy flour, 1 beaten egg, and 70ml of filtered water into a bowl, use chopsticks to mix the mixture until the batter reaches a certain smooth consistency, not too thick or too thin.

    Put a pan on the stove, add 300ml of cooking oil, wait for the oil to heat up, then dip each piece of squid into the mixed flour, and then put the squid into the hot oil and fry over medium heat for about 5 – 7 minutes.

    During the frying process, turn the squid frequently until the squid is evenly golden brown on both sides, then take it out into a basket to drain the oil. Continue frying similarly until all ingredients are used up.
