How to Make Salted Egg Fried Squid

  • Prepare the squid

    After purchasing the squid, remove all the internal organs, take out the ink sac inside the squid, and wash it several times with water until it is completely clean.

    Then cut it into round slices that are bite-sized with a thickness of about 1/3 of a finger.

  • Fry the squid

    Prepare a bowl, add 150gr of tapioca flour and 1 spoon of garlic powder and mix well.

    Take a bowl and crack 2 eggs into it, then beat the eggs until they are mixed.

    Then take each piece of squid, dip it into the bowl of beaten eggs, and coat it with a layer of tapioca flour. Repeat until all the squid is done, then place them on a plate.

    Heat a pan on the stove, add about 150ml of cooking oil, wait for the oil to heat up, then add the squid and fry for about 7 minutes until the squid is golden and crispy, then remove it.

    Place a pan on the stove, wait for the pan to heat up, then add 1 tablespoon of butter and stir for about 2 minutes until the butter is completely melted.

    Then add 4 salted egg yolks that have been mashed and stir for about 1 minute, then add the crispy fried squid and mix well.

    Next, add 30g of Vietnamese coriander, add 1/2 teaspoon of salt and stir well to finish.

How to prepare Crispy Fried Squid with Salted Egg Butter Sauce

  • Prepare the ingredients

    When buying squid, hold the tentacles and pull them away from the body. Next, remove unnecessary parts such as the ink sac, skin, brown digestive bag, and backbone.

    To eliminate slime and fishy smell, rub the squid with 1 tablespoon of salt and 1 crushed ginger for about 5 – 10 minutes, then rinse the squid with cold water and drain.

    Use a knife to cut the squid in half, then score the body in a dragon scale pattern or flower shape, then cut the squid into bite-sized pieces.

    Tip: Do not cut the squid too small, as it will shrink when frying, resulting in a chewy and unappetizing texture.

    Peel and finely chop garlic and shallots.

    For salted egg, crack it and separate the yolk, then rinse briefly with cold water. Next, soak the salted egg yolk in 1 tablespoon of white wine for about 5 minutes, then take it out to drain.

    Tip: Soaking the salted egg yolk in wine helps eliminate the fishy smell and reduce the saltiness of the salted egg.

    Add water to the steamer and bring to a boil, then arrange the salted egg yolks in the steamer and steam for about 10 – 15 minutes until the eggs are cooked evenly.

    Next, take the eggs out and place them in a blender along with 200ml of sweetened fresh milk, 1 tablespoon of sugar, 1 tablespoon of chili sauce, and 1/2 tablespoon of seasoning powder, then blend the mixture until smooth.

  • Make salted egg butter sauce

    Take 1 tablespoon of cornstarch and dissolve it with 1 tablespoon of water.

    Heat a pan, add 1 tablespoon of unsalted butter and melt it, then add 1/2 of the minced garlic and onion from earlier and sauté until fragrant.

    When the garlic and onion become aromatic, pour in the entire mixture of milk and salted egg yolks just blended, lower the heat, and stir continuously until the sauce boils and thickens slightly.

    Next, gradually pour the dissolved cornstarch water into the pan, while pouring, stir continuously until the sauce reaches the desired thickness, then turn off the heat.

  • Frying squid

    Place the crispy frying flour on a plate, then roll the squid in a layer of crispy frying flour, ensuring the flour coats the squid evenly.

    Put a pan on the stove, add 100ml of cooking oil and heat it. Next, add the squid that has been coated in flour into the pan and fry over medium heat until golden brown, then remove and drain the oil.
