How to Choose Fresh and Delicious Tofu
- The first thing to pay attention to is the color of the piece of tofu. Good tofu pieces that do not contain gypsum usually have a creamy white color similar to soybeans.
- Fresh and pure tofu will have a fragrant smell and the characteristic fatty taste of soybeans. Choose pieces that feel light in hand, not dry or hard, and easy to crumble as these are good tofu pieces.
- When frying, you should choose tofu that has a moderate soft and elastic feel in your hand, not too crumbly or too mushy so that it can fry crispy and delicious.

Prepare the tofu
Wash 5 pieces of tofu with warm water and let them dry. Then cut the tofu into small square pieces for easy eating.

Fry the tofu
First, preheat the air fryer at 150 degrees for 5 minutes.
Arrange the cut tofu on the tray, making sure to not place them too close together so that they fry evenly.
Fry the tofu for the first time in the air fryer at 160 degrees for 10 minutes to ensure the tofu is cooked evenly and remains moist inside. Then turn off the fryer and let the tofu rest in the fryer for about 5 minutes.
Next, flip all the tofu pieces and fry for the second time at 200 degrees for 10 minutes until they are golden and crispy on all sides.
Tip: To achieve evenly crispy tofu without being too dry, you should fry the tofu in two batches, as this will help the outside become crispy while keeping the inside moist and soft. -
Prepare vegetables and shrimp paste
Remove the roots and wilted leaves from the accompanying vegetables (perilla, mint, spearmint), then wash them thoroughly and place them on a tray to drain.
Wash the cucumber, let it drain, then slice it and arrange it with the prepared vegetables.
