Eel 500 gr Green bananas 500 gr Minced shallots 1 tablespoon Betel leaves A little (about 1 handful) Green onions 3 stalks Cooking oil 250 ml Caramel sauce 1 teaspoon Seasoning/ monosodium glutamate/ ground pepper A little Oyster sauce 1 tablespoon Fish sauce 2 tablespoons

  • Look for eels with a yellow belly, long tail, and still alive.
  • Avoid choosing large, dark-bodied eels as they are usually farmed and their meat will be mushy and not fragrant.

How to cook Eel with Green Bananas

  • Prepare Eel and Green Bananas

    After buying, clean the eel, remove all the internal organs, wash it thoroughly, and cut it into pieces about the length of a finger.

    Peel the green bananas, wash off the banana sap, and slice them. Pick the young and whole betel leaves, then chop them finely along with the scallions.

    Ways to prepare eel to reduce fishy smell and slime:

    • Method 1: You can use kitchen ash to cover the eel and then scrape it off to effectively clean the slime off the eel.
    • Method 2: Rub the eel with salt, then rinse several times along the eel’s spine with lemon juice to also help clean the slime.
    • Method 3: To clean the eel’s intestines, soak the eel in rice water for about half a day; the intestines will be clean and free of any fishy odor.
