  • It is advisable to choose pork cracklings that are golden yellow, crispy, with a clear shelf life and origin. Avoid purchasing those that are dark, soggy, or have a strong oil smell.

Ingredients for fried rice with pork cracklings

How to make Fried Rice with Pork Cracklings

  • Prepare the ingredients

    After cooking the rice, let it cool completely, then store it in the refrigerator for about 1 hour. Separate the egg whites and yolks into 2 bowls.

    After the rice has been in the refrigerator for the required time, take it out, pour the 2 egg yolks into the bowl of rice, and use your hands with gloves to mix the egg yolks evenly with each grain of rice. Next, cover the bowl tightly with plastic wrap and set aside.

    Peel and wash the carrots, then dice them finely. Cut the sausages into similarly sized cubes as the carrots.

    Wash the cucumber, then peel and slice it thinly for decoration.

    Chop off the roots of the green onions and cilantro, discard the wilted leaves, wash them thoroughly, and chop them finely, keeping the green onion tops separate.

  • Making fried rice with crispy pork fat

    Place a pan on the stove, turn on medium heat to heat 2 tablespoons of cooking oil, then add the chopped green onions and crispy pork fat to sauté, stirring until fragrant, then add the egg whites and stir well.

    Next, add the rice mixed with egg yolks, stir continuously until the rice grains are firm, then season with 1 teaspoon of soy sauce, 1 teaspoon of seasoning powder, and 1/2 teaspoon of ground pepper, continuing to stir for the rice to absorb the seasoning.

    Continue to add diced carrots and sausages to the pan, stir for about 3 minutes until the carrots are tender, then adjust the seasoning to taste and add the chopped green onions, stirring a few more times and turn off the stove.

    Transfer the rice to a plate, garnish with a little chopped cilantro and sliced cucumber around the edges to complete.
