1. Traditional Milk Tea

Preparation
20 minutes
Difficulty
Easy
Ingredients for Traditional Milk Tea Serves 1
Black tea 15 gr Brown sugar 20 gr Creamy powdered milk 60 gr (MT35 powder)
What is black tea (red tea)?
- Black tea, commonly known as red tea, is made from the full fermentation process of the leaves and buds of the green tea plant.
- Red tea usually has a light fragrant taste, is less astringent, and contains more caffeine compared to green tea, making it quite suitable for the taste of most Vietnamese people.
- Additionally, red tea is favored by many for its easy storage; while green tea can only be stored for 12 to 18 months, black tea can last for several years.
Ingredients
Tea strainer, spoon, glass, bowl, large bowl,…
How to make Traditional Milk Tea
-
Soak the tea
Put 15g of black tea into the tea strainer. Then, place it into the glass and add 200ml of boiling water (use a kettle to boil the water faster), and let the tea steep for 15 minutes.
-
Mix the milk tea
After 15 minutes, remove the tea strainer and add 20g of brown sugar. Next, add 60g of powdered milk.
Use a spoon to gently stir until the tea, brown sugar, and powdered milk are completely dissolved, creating a beautiful brown mixture.
-
Final product
The milk tea after completion has a light brown color thanks to the combination of black tea and creamy powdered milk.
In particular, the milk tea does not have a harsh sweetness; when enjoyed, you will feel a slightly bitter tea flavor, the mild sweetness from brown sugar, and the creamy texture of powdered milk, which is characteristic of traditional milk tea.
2. White pearls
Preparation

Difficulty

Ingredients for making White pearls For 2 people
White sugar 250 gr (can be adjusted to taste) Soft jelly powder 4 teaspoons (jelly powder) Firm jelly powder 1 teaspoon (agar powder) Drinking water 1 liter
Distinguishing between jelly powder and crunchy jelly powder
- Crunchy jelly powder will create a slightly firm and solid texture for the product. In contrast, soft jelly powder will create a more supple and wobbly texture for the product compared to crunchy jelly powder.
- Soft jelly powder is usually used to cook with fruit juice to create a beautiful white transparency. Crunchy jelly powder is often mixed with coffee, pandan leaves, or chocolate to add another color to the product.
Tools needed
Pot, a bottle or jar with a small tip to shape the pearls, stove, spoon, bowl,…
How to make white pearls
-
Boil the jelly mixture
Heat 1 liter of simmering water (note not to boil vigorously), then add 1 teaspoon of crunchy jelly powder and stir well. Next, mix sugar with 4 teaspoons of soft jelly powder.
Add the sugar and soft jelly mixture to the pot and stir well until dissolved. Then, simmer until the mixture thickens slightly.
-
Forming the pearls
Then pour the jelly mixture into a clean bottle with a pointed tip (like a bottle for pho sauce and must be heat-resistant).
Tip: In case you do not have a heat-resistant bottle, let the mixture cool down a bit but still warm so that the mixture does not solidify. We need to do this step so that when pouring the mixture into the bottle, the bottle does not shrink.
Prepare a large bowl of ice water, then pour about 1/2 cup of cooking oil so that the oil separates from the water.
Drop each jelly drop into the bowl; the jelly drops will form into round shapes as they pass through the layer of oil and then sink into the ice water to harden, creating the finished pearls.
-
Completion
You scoop the tapioca pearls out and wash off the oil, then put the pearls into a small bowl, mix in sugar and a little lemon juice to enhance the flavor.
-
Final Product
After completing, you can add the tapioca pearls to lemon tea or milk tea to enjoy, with a chewy and crunchy texture that surely blends well with the creamy flavor of milk tea or the refreshing sourness of lemon tea, it will definitely not disappoint you.
How to store leftover milk tea and white tapioca pearls
- For milk tea, you can seal it tightly and store it in the refrigerator’s cool compartment for 2-3 days. However, you should consume the milk tea within a short period to avoid it forming a film or separating into two layers of milk and tea.
- White tapioca pearls should be placed in a plastic container, sealed tightly, and stored in the refrigerator for 5-7 days. Tapioca should not be placed in the freezer because the jelly-like structure can easily break when thawed.
