  • When buying chicken gizzards, observe the color; fresh gizzards will have a pinkish-red color and should not have a foul smell, and the liver should not be dark or pale green.
  • Good chicken gizzards should not have an unpleasant smell, should not be dark, and especially should not be slimy.
  • Touch the parts with your hand; if they feel elastic and not slimy, then they are good gizzards.

  • Prepare the chicken guts and ingredients

    To clean and eliminate the smell, soak the chicken guts in diluted salt water with 1 tablespoon of lemon juice for about 15 minutes, then rinse thoroughly with water and drain.

    Then use a knife to cut the chicken guts into bite-sized pieces.

    Wash the green onions and slice them thinly.

    • Method 3: Blanch the chicken guts in boiling water with ginger, salt, and white wine for about 2 minutes, then remove and rinse with water.

  • Marinate the chicken guts

    Marinate the chicken guts with 1 teaspoon of seasoning powder, 1/2 teaspoon of salt, 1/2 teaspoon of sugar, 1/2 teaspoon of pepper, 2 tablespoons of chili powder, and 1 tablespoon of Korean chili sauce.

    Mix well and marinate for about 15 minutes for the chicken guts to absorb the flavors.

    Note: You can adjust the spiciness to suit your taste.

    Place a pan on the stove, add about 1 – 2 tablespoons of cooking oil into the pan, and heat the pan over medium heat. Then add 1/2 of the sliced green onion to sauté until fragrant.

    When the green onion starts to smell good, add all the marinated chicken intestines into the pan, stir continuously until the chicken intestines are slightly firm, then season with 1 tablespoon of Korean chili sauce and 2 tablespoons of soy sauce. Stir until the sauce in the pan thickens and the chicken intestines are cooked evenly, then turn off the heat.

    Finally, add the remaining green onion into the pan, stir well once more, and then scoop it out onto a plate to enjoy.
