Prepare the fruits
Cut the avocado in half lengthwise, remove the seed and use a rice spoon to scoop out the flesh as close to the skin as possible to avoid waste. Wash the strawberries and remove the leaves. Use a knife to slice the avocado and strawberries thinly.
Remove the seeds from the jackfruit, then cut it into strips.
Peel the banana and leave it whole.
Roast the peanuts over low heat for about 10 minutes until fragrant, when the skin turns a brown color, turn off the heat, let cool, then crush finely.

Cook the mixture of ice cream powder
Place a pot on the stove, adding in order 600ml of coconut milk, 2 tablespoons of tapioca flour, 280ml of fresh milk, 6 tablespoons of condensed milk, 4 tablespoons of sugar, and 1 teaspoon of salt, stirring well.
After the mixture is well combined and completely dissolved, turn on medium heat to boil for about 10 minutes. Continue cooking until the mixture thickens, then turn off the heat and let it cool.
Note:
- It is advisable to stir the mixture well before cooking to prevent clumping.
- When cooking, always keep the heat medium or low; never let it be high to prevent the ingredients from burning.
- While cooking, continuously stir to prevent the mixture from sticking to the bottom of the pot.

Flattening the bananas
Put the bananas in a plastic bag and place it on a cutting board. Use another cutting board to press down and flatten the bananas.
Note: Apply moderate force, don’t press too hard, or the bananas will get mashed, making the ice cream taste bad. -
Making fruit banana ice cream
Prepare a large bowl, layer the bananas, strawberries, jackfruit, and avocado in that order from bottom to top. Then pour a layer of tapioca starch mixed with coconut milk over, enough to cover the bananas.
Continue layering the ice cream toppings until the coconut milk and fruit are finished.

After finishing the ice cream filling, sprinkle peanuts on top and place your ice cream bowl in the freezer refrigerator for about 3 – 4 hours.
After 4 hours, you can take the ice cream out to enjoy.
