How to choose fresh ingredients
How to choose fresh venison
- To choose good quality venison, you should select reputable stores or supermarkets to buy the meat!
- Fresh venison will have a bright red color, with smaller and finer muscle fibers compared to beef. The outer skin should have a beautiful translucent yellow color.
- When pressed, good meat should have a certain elasticity and should not stick to your hand.
- Avoid buying venison that shows signs of sliminess, mushiness, or has a foul smell, as this indicates the meat has been stored too long and is spoiled.
How to choose fresh lemongrass
- When choosing lemongrass, you should prioritize those that are dry, of moderate size, with tightly rolled leaves.
- Next, you should choose lemongrass that has a white color at the base and gradually turns green towards the leaves, with a bit of fuzz on the surface and fresh leaf sheaths.
- Do not choose lemongrass with dry, yellow leaves or that has wilted, as these are usually older and will have less fragrance.

Prepare the ingredients
Wash the deer meat with a little diluted salt water, then rinse it clean, drain, and cut into thin pieces. Mince the chili and place it in a bowl. Ginger should be peeled, rinsed briefly, then cut into thin strips and set aside.
Effective tips to eliminate the smell of deer meat- Method 1: Use a little white alcohol to soak the deer meat for 5 – 10 minutes, then wash it clean with water and drain. This is a quite simple method but very effective in eliminating odors!
- Method 2: Crush a little ginger and rub it all over the surface of the meat, then rinse it with clean water and drain.
- Method 3: Put a pot on the stove, add a little vinegar diluted with water into the pot. Boil the water on high heat, wait for it to boil, then add the deer meat to blanch for about 3 – 5 minutes, then take it out and rinse it clean.
Peel off 1 – 2 layers of the outer skin of the lemongrass, then wash it clean; cut one stalk into thin slices, and crush the remaining three stalks at the root to release the fragrance during steaming.
-
Marinate the deer meat
Put all the deer meat into a bowl, season with a mixture of spices including: 2 tablespoons of seasoning powder, 1 tablespoon of monosodium glutamate, 1 tablespoon of sugar, sliced lemongrass, minced chili, shredded ginger, and 3 smashed lemongrass stalks, then mix well. Marinate the deer meat mixture for 15 – 20 minutes to absorb the spices.
-
Steam the deer meat
Put 1 cup of water (rice bowl) into the steamer, then place the bowl of marinated deer meat inside. You don’t need to add more water to the bowl of meat because the deer meat will release water while steaming.
Place the steamer on the stove and steam the deer meat for 30 minutes over medium heat. After that, turn off the heat, take the bowl of steamed deer meat out, and it’s done.
