Ingredients for Turmeric Chicken Serves 4 – 5 people

Chicken thigh meat 1 kg Green onions 3 stalks Shallots 4 bulbs Ginger 2 pieces Onion 2 bulbs Chili 3 pieces Turmeric powder 1 tablespoon Fish sauce 1 tablespoon Common seasoning a little (sugar/ salt/ seasoning powder/ monosodium glutamate) Cooking oil 3 tablespoons

How to choose fresh, delicious chicken

  • Good chicken will have a characteristic golden skin. The outer skin is thin, feels smooth to the touch, not too bumpy, and has good elasticity.
  • The inner chicken meat should be a natural pink-red color, not too pale or too dark. Especially, the chicken meat should not have bruises or blood clots. Parts of the meat that are slightly pale or turning a darker gray indicate chickens that died before being processed.
  • If buying pre-processed and packaged chicken, be sure to carefully check the expiration date and packaging date, and check if the bag seal is intact.

How to Prepare Stir-Fried Turmeric Chicken

  • Prepare the chicken

    To prepare the chicken meat cleanly and without odor, take 1kg of chicken, wash it thoroughly with water, then use a knife to cut it into small pieces. After that, soak the chicken in diluted salt water for about 10 minutes and then rinse it with clean water.

    Tips for cleaning chicken meat without odor:

    • You can use a mixture of wine and sliced ginger, gently rubbing and squeezing the whole breast piece again, which helps eliminate the smell and dirt. Rinse well and let it dry.
    • Alternatively, you can add lemon juice to the water and soak the chicken breast for 15 – 20 minutes. Then take it out, rinse with cold water, and let it dry.

    First, use a knife to peel 2 onions. Then remove the root part of the onion and cut it into wedges.

    • Cut onions in a well-ventilated area, such as under a range hood or near a window.
    • Chill the onions in the freezer for 10-15 minutes before cutting.
    • Soak the onions in water before cutting.
    • Cut the onions horizontally.
    • Use vinegar or salt water.

    Peel 2 pieces of ginger and then slice them thinly. For 4 shallots, chop them finely.

    For 3 stalks of green onion, wash them thoroughly and then cut them into pieces about 3 fingers long.

  • Marinate the chicken

    To marinate the chicken, add 1 tablespoon of fish sauce, 1/2 teaspoon of MSG, 1/2 teaspoon of salt, 1/4 teaspoon of seasoning powder, 1 tablespoon of sugar, and 1 tablespoon of turmeric powder to the chicken, then mix well and let it marinate for 30 minutes to absorb the spices.

  • Cook the stir-fried chicken

    Place a pan on the stove, add 3 tablespoons of cooking oil and heat it up. When the oil is hot, add sliced shallots and sauté until golden brown, then add sliced ginger and continue to sauté with the shallots until fragrant.

    Next, add the marinated chicken and stir-fry over high heat for about 3 – 5 minutes, turning the chicken to ensure it cooks thoroughly and firms up.

    Add 4 tablespoons of water from the marinated chicken, swirl it around, and then add it to the pan.

    Reduce the heat, then cover the pan and let it cook for about 10 minutes until the water is reduced, then season to taste.

    Next, add the onion and 3 chili peppers to the pan and stir-fry over high heat for about 5 minutes until the onion is cooked.

    Add the chopped green onions and stir-fry for another 10 seconds, then turn off the heat to complete the dish.
