Prepare the Pigeon
When purchasing the pigeon, you can ask the seller to briefly singe it so that the skin tightens up, making it tastier when enjoyed.
Clean the pigeon thoroughly with coarse salt, then rinse with water and let it drain.
Use scissors to cut the pigeon into bite-sized pieces.

Wash the Eggplant
Wash the salted eggplant thoroughly and squeeze it several times with clean water to remove most of the sour taste.

Prepare Other Ingredients
Wash the betel leaves and cut them into thin strips.
Finely chop the onion and garlic or use a blender to mince them.
Slice a little chili diagonally, and mince some along with the onion and garlic.
Cut the green onion into pieces about 5 cm long.

Marinate the pigeon
Marinate the pigeon with some common spices like pepper, monosodium glutamate, oyster sauce, and a bit of freshly minced garlic and onion.
Mix well and let the meat absorb the seasoning for about 15 minutes.

Add garlic and onion to the pan and sauté until fragrant.
