Ingredients for Stir-fried Pigeon with Lemongrass and Chili For 3 people

Pigeon 2 birds Chopped lemongrass 100 gr Chopped chili 2 pieces Chopped onion 2 tablespoons Fish sauce 2 teaspoons Oyster sauce 1 tablespoon Common seasoning a little (salt/ sugar/ monosodium glutamate/ seasoning powder)

How to choose fresh and delicious pigeon

  • You should choose those that are still fresh, with pink skin that is not pale.
  • Press on the armpit of the pigeon; if the meat feels thick, it is a good quality. Press on the breast; if it is soft, that indicates quality pigeon.
  • Avoid buying those that appear pale or have a dull color. When touched, the meat feels mushy.

How to cook Stir-fried Pigeon with Lemongrass and Chili

  • Prepare the pigeon

    Clean the pigeon thoroughly, soak it in diluted salt water for 10 minutes, then remove it and let it drain. After that, use a flame to roast the pigeon for about 5 minutes.

    Tip: Roasting will help remove the feathers and reduce the unpleasant smell of the pigeon.

    After roasting, cut off the beak and feet of the pigeon. Chop the pigeon into bite-sized pieces.

  • Marinate the pigeon meat

    Marinate the pigeon with 1 teaspoon of sugar, 1 teaspoon of monosodium glutamate, 1 teaspoon of seasoning powder, 1 tablespoon of minced lemongrass, 1/3 teaspoon of minced chili, 2 teaspoons of fish sauce, and 1 tablespoon of oyster sauce.

    Mix well and marinate for 15 minutes to allow the spices to penetrate the pigeon meat.

  • Stir-fried Pigeon

    Place a pan on the stove, add 2 tablespoons of cooking oil and sauté the remaining shallots with 2 teaspoons of minced lemongrass until fragrant. Once the shallots and lemongrass are aromatic, add the pigeon and stir well.

    Add about 70ml of water and stir-fry until the pigeon meat is firm and the sauce thickens, then add all the minced lemongrass and chili and stir-fry for another 5 minutes to finish.
