Vermicelli 200 gr Cabbage 100 gr Wood ear mushrooms 100 gr Carrot 1 piece Chives a little Garlic 2 cloves (minced) Soy sauce 3 teaspoons Fish sauce 1/2 teaspoon Cooking oil 2 tablespoons Seasoning powder 1/2 teaspoon Common spices a little (salt/ sugar/ monosodium glutamate/ ground pepper)

  • Since vermicelli is used for frying, you should choose mixed vermicelli or rice vermicelli because the strands soften quickly and are not too chewy when fried.
  • Fresh vermicelli should have intact, long, thick strands that do not break or crumble and are crisp when lightly touched.
  • Dry vermicelli typically has a distinctive aroma from its ingredients, such as the smell of dong riềng, cassava, or the fragrance of rice. In contrast, dirty vermicelli lacks its characteristic smell.
  • When buying, choose packaged vermicelli from clear brands. This helps you avoid buying low-quality or expired vermicelli.

  • When selecting cabbage, you should hold it to see if it feels firm. Good cabbage is usually heavy, with tightly packed leaves. Observe the head, it should be thick and closed, and the stem of the cabbage is usually small.
  • Fresh cabbage often has a light greenish-white color, while purple cabbage has a deep purple mixed with white, with crisp and firm leaves.
  • Be careful not to buy cabbages with yellowing leaves, brown spots on the leaves, or split cores. Cabbage that has been stored for a long time will have brown stems.
  • You can also choose Da Lat cabbage, which is usually lighter green, not bright, has inconsistent sizes but is often very large.

How to make Stir-fried Vermicelli with Cabbage

  • Prepare the ingredients

    First, soak the vermicelli in cold water for 5 – 10 minutes. When it becomes soft, take it out and let it drain.

    Next, you can cut the vermicelli in half for easier eating or leave it long depending on your preference. Before the vermicelli is completely dry, add 1 tablespoon of cooking oil to prevent it from sticking when mixed.

    For the cabbage, cut off the stem and wash it thoroughly. You should carefully wash the inside of each cabbage leaf to remove any dirt. Peel the carrot. Then, cut the carrot and cabbage into thin strips.

    Next, soak the dried mushrooms in cold water for 20 minutes or in hot water for 10 minutes. Then cut them into thin strips.

    Wash the scallions and cilantro, then cut them into short lengths according to your family’s preference.

  • Making stir-fried noodles with cabbage

    You place a pan on the stove, add 1 tablespoon of cooking oil. When the oil is hot, add minced garlic and fry until golden.

    Then, add the wood ear mushrooms to stir-fry first, followed by the carrots and cabbage in turn.

    Stir-fry for about 2 – 3 minutes, then season with 2 teaspoons of sugar, 1 teaspoon of monosodium glutamate, 1/2 teaspoon of salt, 3 teaspoons of soy sauce, 1/2 teaspoon of seasoning powder, a little ground pepper, 1/2 teaspoon of fish sauce, and stir well for another 5 minutes.

    Finally, add the noodles and continue to stir-fry, then adjust the seasoning to taste and mix well to ensure the noodles absorb the flavors. Turn off the heat.

    Add some chopped scallions to enhance the flavor of the dish and also to garnish the stir-fried dish to make it more appealing.
