Beef tenderloin 300 gr Chayote shoots 300 gr Ginger 10 gr (1 small piece) Minced garlic 2 teaspoons Oyster sauce 1 teaspoon Cooking oil 1 tablespoon Common seasoning A little (seasoning granules/ monosodium glutamate/ ground pepper)

How to choose fresh chayote shoots

  • Fresh chayote shoots usually have a bright green color, the stem is not too long, not wilted or showing signs of bruising, not slimy, has soft stems, and many small curly tips.
  • To check the quality of the chayote shoots, you can break it with your hand; if the shoots are still crispy and not too wilted, then they are fresh chayote shoots.
  • You should avoid buying chayote shoots that are too long because they are old shoots, fibrous, and cannot be used; the stems must be cut off during preparation.

How to choose fresh beef, ensuring quality

  • Fresh and good-quality beef typically has a bright color, not darkened or showing any unusual tiny spots on the surface.
  • Additionally, for quality beef, when you press lightly with your hand, you will feel the meat is firm, has good elasticity, and is not slimy.
  • You should not choose beef that has a foul smell, pale color, or fibers that separate from each other, as these are parts of beef that have been stored for too long and are of poor quality.

Ingredients for the dish of stir-fried chayote shoots with beef

How to cook Stir-fried Su Su Shoots with Beef

  • Prepare the ingredients

    First, with 300g of su su shoots you bought, pick out the old, wilted leaves with your hands, then peel off the skin and fibers, and cut them into bite-sized pieces. Rinse with water several times until clean, then drain.

    Peel the ginger, wash it clean, then chop it finely.

    Wash the beef briefly with water, let it drain or use a clean dry cloth to pat it evenly on the surface, then continue to use a knife to slice it into thin, bite-sized pieces.

    Then, place the sliced beef on a plate, add 1 teaspoon of monosodium glutamate, 1 teaspoon of seasoning powder, 1 teaspoon of oyster sauce, 2 teaspoons of minced garlic, 1/2 teaspoon of ground pepper, and the chopped ginger. Use chopsticks to mix well and let it marinate for about 15 minutes for the beef to absorb the seasoning evenly.

    Tips for cleaning beef properly, without odor

    • Method 1: To eliminate the smell of beef, you can soak the beef in a little white wine or diluted vinegar for 5 – 7 minutes.
    • Method 2: Alternatively, you can take a piece of ginger that has been smashed, roast it until cooked, then rub it over the entire surface of the meat for a few minutes, then rinse with clean water.

    Place a pan on the stove with 1 tablespoon of cooking oil and heat over medium flame. When the oil is hot, add all the marinated beef and increase the heat to high, quickly stir-frying for 3 – 5 minutes until the beef is medium rare, then turn off the heat and transfer to a bowl.

    Using the same pan, continue heating over medium flame. Next, add all the chayote tops and stir-fry for about 5 minutes.

    When the chayote tops are cooked, add the stir-fried beef back in, stir well for 3 minutes, then adjust the seasoning to taste, turn off the heat, and transfer to a plate to finish.
