How to choose good ducks
- For live ducks: Choose ducks with shiny, smooth feathers, press the breast area and feel for firm, round meat, with thick skin on the neck and belly. Additionally, if you can cross the two wings of the duck, it is already mature, and the meat quality is up to standard.
- For prepared ducks: Choose ducks with bright skin color, light yellow turning white, without any bruises or blood clots. Pressing on the meat should feel firm and elastic for good quality. Do not buy if the duck appears dull, soft, or has an unpleasant smell.

How to prepare Char Siu Duck

Prepare the duck meat
Buy the duck, wash it clean, and use half a lemon to rub the skin of the duck in a basin of diluted salt water. Then rinse thoroughly with cold water, and chop into small pieces or large pieces depending on your family’s preference.
How to clean duck meat without odor:- To keep the duck clean and odor-free, after cleaning the feathers, rub coarse salt evenly over the meat and rinse it thoroughly with water.
- Alternatively, you can use a mixture of alcohol and crushed ginger or a mixture of salt and vinegar to rub all over the meat, then rinse again to help eliminate the duck’s odor and make it cleaner.
- Duck meat should be processed immediately or pre-prepared and kept in the refrigerator for storage before cooking, to avoid leaving it outside for too long as it can become smelly.

Making Char Siu Sauce
For 1kg of duck meat, you prepare the char siu sauce according to the following recipe:
In a bowl, add 40g of rock sugar, 1 tablespoon of honey, 2 teaspoons of salt, 1 teaspoon of monosodium glutamate, 1 tablespoon of seasoning powder, 1 teaspoon of ground pepper, 1.5 tablespoons of oyster sauce, 1 tablespoon of sesame oil, 2 tablespoons of soy sauce, 3 tablespoons of meat marinade, 1 tablespoon of char siu powder, and 3 tablespoons of Chinese cooking wine. Mix well so that the spices are blended together.
Peel 5 cloves of garlic, 5 shallots and add them to the blender along with a bit of cilantro stems and the sauce you just made, then blend until smooth.
Tip:- If you don’t have rock sugar, you can use white granulated sugar instead.
- If you don’t have meat marinade, you can substitute it with char siu sauce or other marinades according to your preference.
- Char siu powder is salty, so you only need 1 tablespoon for 1kg of duck meat!

Marinate Duck with Char Siu Sauce
Evenly marinate both sides of the duck meat with the char siu sauce, then cover the bowl containing the duck meat with plastic wrap, place it in the refrigerator, and marinate for 1 to 2 hours for the duck to absorb the char siu sauce.
Tip: To allow the duck to absorb the sauce more deeply, you can increase the marination time to about 3 to 5 hours! -
Braised duck meat
Place a pan on the stove and add the duck meat along with the marinating sauce to braise. Initially, turn on high heat to bring the sauce to a boil for 5 minutes.
Then reduce the heat and braise the duck for about 30 minutes until the sauce thickens and the duck is tender. At this point, add 1 tablespoon of malt syrup, cook for another 10 minutes, and then turn off the heat.
Tip:- Be sure to stir the duck meat evenly so that the seasoning can penetrate all sides of the meat.
- If you have a oven, you can roast the duck at 180 degrees Celsius for 20 minutes.
