How to Choose Fresh Chicken
- If choosing pre-packaged chicken, select chicken with light yellow, thin, smooth skin, and high elasticity. The skin should only be dark yellow in certain areas like the breast, wings, and back.
- The chicken should be compact, firm, and have a narrow breast. Press with your hand and feel for elasticity and firmness.
- The chicken should not have a foul smell, nor should it have bruises or blood clots. Do not choose chicken with darkened skin, as this indicates it died before being slaughtered.
How to choose fresh and delicious taro
- Choose tubers that are round and have an egg-like shape. The outer skin is rough, with many roots and dirt still clinging to the skin.
- Choose tubers with many eyes because the dish will be richer and more delicious.
- Do not buy tubers that are too large or too small, and avoid those with spots or mold.
How to choose fresh and delicious straw mushrooms
- Select whole straw mushrooms, with a distinctive mushroom aroma, round shape, and still have caps.
- Prefer straw mushrooms that are black or gray as they taste better than the white ones.
- Do not choose mushrooms with caps that have fully opened and have a foul smell.

Prepare and Marinate the Chicken
After buying the chicken, clean it and soak it in diluted salt water for about 10 minutes. Then chop it into small pieces, rinse it with water, and let it drain.
How to Prepare Chicken Without a Smell:
- First, remove all feathers (including fine hair and the hair on the feet) to ensure the chicken is white and odorless.
- Mix vinegar and salt in a ratio of 2 parts salt to 1 part vinegar, then rub it all over the chicken, scrubbing several times before rinsing with water.
- You can crush 2 pieces of ginger with a little white wine and massage it onto the chicken, letting it sit for about 30 minutes before rinsing with water.
To marinate the chicken, add 2 teaspoons of minced garlic, 2 teaspoons of minced lemongrass, 2 teaspoons of minced shallots, 2 teaspoons of sugar, 1 teaspoon of monosodium glutamate, 2 teaspoons of seasoning powder, and 200g of fermented bean sauce, then mix well by hand and marinate for 20 minutes to allow the chicken to absorb the spices.

Preparation of taro
After buying taro, peel it and use a knife to cut it into square pieces about 2 finger widths thick.
After cutting, soak the taro in water to prevent it from turning black.
How to peel taro without itching:
- Leave the layer of soil on the taro skin, then use dry hands to peel it. After that, soak the taro in diluted salt water for 10 minutes before cooking.
- Note that during the soaking process, you should not directly put your hands into the taro.
- Wear gloves to peel the skin.
- If you happen to experience itching from peeling taro, you can heat your hands over a flame, soak your hands in saltwater mixed with lemon juice, or crush green banana leaves and apply them to the itchy area for about 10 minutes to relieve the itch!

Stir-fry chicken
Place a pan on the stove, add 2 tablespoons of cooking oil and heat it until hot. When the oil is hot, add 2 teaspoons of minced garlic, 2 teaspoons of minced shallots, and 2 teaspoons of minced lemongrass, then sauté until fragrant and golden.
Then, add the marinated chicken and stir-fry on high heat for about 5 – 7 minutes until the chicken is seared.
Tip: Stir-frying the chicken first will help the chicken retain moisture and absorb the flavors better. -
Cooking Chicken
To cook the chicken, add 2 liters of water to the pan where the chicken is being stir-fried and bring the water to a boil, occasionally skimming off the foam on the surface.
Then, add 2 teaspoons of sugar, 2 teaspoons of seasoning powder, and 1 teaspoon of monosodium glutamate, and cook for about 15 minutes.
After 15 minutes, add the taro and cook for another 7 minutes, then add 4 teaspoons of condensed milk, 4 teaspoons of chili paste, 2 teaspoons of fish sauce, and 50g of straw mushrooms, cooking for another 2-3 minutes, adjusting the seasoning to taste.
Garnish the dish with a little cilantro, rice paddy herb, and a chopped chili, and it’s done.
