How to choose good cassava (manioc)

  • You should choose cassava that is long and slender, with a thicker body; when you hold it, it should feel heavy for better quality.
  • Use your fingernail to gently scrape the thin outer skin of the cassava; if the inner skin is light pink, choose it, if it’s white, it’s better to pass as the pink skin has fewer toxins than the white skin.
  • Additionally, do not keep cassava for too long as it will become hard, dry, and less tasty.

How to prepare Cassava Cake with Coconut

  • Prepare the ingredients

    After purchasing the cassava, use a knife to cut off the head and tail of the cassava (as this part often contains toxins). Then cut into pieces and peel off the outer layer, then soak in saltwater to remove all the latex and toxins from the cassava. You should soak it for about 4 – 8 hours, and during the soaking process, change the water 1 – 2 times.

    After soaking, rinse it thoroughly with water and use a knife to cut the cassava pieces in half to help them cook faster and become softer. Then place the cassava in a steaming basket, sprinkling a little salt on top while steaming. Steam for about 20 – 25 minutes until the cassava is very soft, then turn off the heat.

    Transfer the cassava to a bowl and use your hands to mash it or use a blender to puree the cassava.

    Tips to remove toxins from cassava:
    • The outer skin of cassava often contains toxins, so it is best to prepare the cassava a day before making the cake!
    • Soaking cassava in a little salt helps prevent it from turning black and reduces toxins. During the soaking process, you must frequently change the water.

  • Mixing the dough

    After the cassava has been finely crushed, add to the mixture of ingredients including: 50g tapioca flour, 400ml coconut milk, 100g grated coconut, 100g sugar, 50g roasted white sesame, and 50ml condensed milk, and mix well.

    Next, use your hands to knead the dough; if the dough is dry, add more water. Knead the dough until the ingredients are completely blended into a mixture that does not stick to your hands, then divide the dough into equal parts to shape the cakes.

    Then, shape the dough into round cakes and use the palm of your hand to press down gently so that the cakes flatten slightly and look more attractive; moreover, this will prevent them from breaking when baking.

  • Baking the cake

    After shaping the cakes, use a brush to spread a little oil on the surface of the cakes so that they do not dry out and break when baking.

    Next, preheat the oven for 10 minutes at 160 degrees Celsius. Then, place the cakes in the oven and bake for about 20 – 25 minutes, then flip the cakes over and bake for another 20 minutes. If you want the top of the cakes to be more golden, you can extend the baking time by an additional 5 minutes or you can bake the cakes over charcoal.

    The cassava cake with coconut milk looks very attractive, with the aroma of cassava mixed with the fragrant coconut milk.
