Squid 500 gr Pineapple 1/4 fruit (ripe) Onion 1 bulb Shallots 3 bulbs Green onions 2 sprigs Chili powder 1 teaspoon Fish sauce 2 tablespoons Cooking oil 2 tablespoons Common seasoning a little (Ground pepper/ seasoning powder/ monosodium glutamate/ salt)

How to cook Squid stir-fried with pineapple and onion

  • Preparing the ingredients

    Clean the squid by removing the internal organs, wash thoroughly with water, cut into bite-sized pieces about the length of one finger, and let it drain.

    Quick way to clean squid

    • Method 1: After cleaning the internal organs, soak the squid in water mixed with vinegar, lemon, or alcohol for about 10 minutes, then rinse with clean water; this helps eliminate the fishy smell and cleans the squid better.
    • Method 2: You can use pure rice vinegar to gently rub the squid, then rinse again to effectively remove the fishy smell.

    Onion and shallot should have their roots trimmed and skins peeled. For the onion, cut into wedges, and the shallot should be sliced thinly.

    Chives should have their roots trimmed, washed clean, and then cut into pieces about one finger long. Pineapple should have the eyes and hard core removed, washed clean, and then sliced thinly about 1/3 of a finger long.

  • Marinate the squid

    Marinate the squid with 2 spoons of fish sauce, 1 teaspoon of seasoning powder, 1/2 teaspoon of monosodium glutamate, 1 teaspoon of ground pepper, and 1/2 of the sliced shallots.

    Mix well and marinate for about 15 minutes to allow the squid to absorb the seasoning.

  • Make sautéed squid with pineapple

    Heat a pan over medium heat, add 2 tablespoons of cooking oil and the remaining sliced shallots to the pan until golden and fragrant.

    Then add 1 teaspoon of chili powder to the pan, stir well to create color, and then add the marinated squid, stir for about 2 minutes until the squid is firm, then add the prepared pineapple and onion, seasoning with another teaspoon of seasoning powder.

    Stir well for about 10 minutes for the ingredients to cook and absorb the seasoning, taste and adjust if needed. Finally, add chopped green onions and sprinkle some ground pepper on top, stir once, turn off the heat, and it’s done.

How to Cook Squid Stir-fried with Pineapple and Onion

  • Prepare the squid

    Remove the inner bag of the squid, then soak the squid in water mixed with a little salt for about 5 minutes, then rinse and place in a basket to drain.

    After draining, cut the squid into bite-sized pieces.

    Peel the garlic and shallots, remove the stems from the chili, then wash and chop finely. Peel the pineapple, remove the eyes and core, rinse briefly with water, then cut into thin slices.

    Peel the onion, cut off the roots and yellow leaves of the scallions and cilantro, then wash and drain. Next, cut the onion into wedges, and chop the scallions and cilantro into bite-sized pieces.

  • Marinate squid

  • Stir-fried Squid

    Place a pan on the stove, add 3 tablespoons of cooking oil to the pan and turn on medium heat. When the oil is hot, add the remaining minced garlic, chili, and shallots.

    Wait until the mixture turns golden and fragrant, then add the marinated squid and stir-fry on high heat. After 5 minutes, when the squid shrinks slightly and has a fragrant smell, add the onion and stir well.

    After stir-frying the onion for about 3 minutes, continue to add pineapple and stir-fry for another 5 minutes until the squid, onion, and pineapple are evenly cooked. Adjust the seasoning to taste. Sprinkle chopped scallions on top and then turn off the heat.
