How to Choose Good Duck Eggs
- Good duck eggs have a shell with a little white powder, and they feel heavy when held.
- To check if the eggs are fresh, simply soak them in water. Fresh and good eggs will sink and stay at the bottom, while stale eggs will float and lie sideways.
- Avoid choosing eggs that are too light, have dark mold on the shell, are hollow inside, or make noise when shaken, as these may be old or spoiled eggs.

Boil the duck eggs
Rinse the duck eggs briefly with water to remove dirt.
Place a pot on the stove, add enough water to fill 1/3 of the pot and bring to a boil. When the water is boiling, add 3 duck eggs and boil for about 20 minutes. After that, take them out to cool and peel the shells.

Mix the batter
In a small bowl, add 50gr of crispy batter mix and 100ml of water, then stir well until the batter is completely dissolved.

Fry the quail eggs
Dip 3 quail eggs one by one into the prepared batter mix.
Place a pan on the stove, turn the heat to medium, and add about 300ml of cooking oil. Wait for the oil to heat up, then add the quail eggs and fry until golden, then turn off the heat and remove them to drain the oil.

Prepare the sauce and add the balut
Place a pan on the stove, add 1 teaspoon of cooking oil (remaining oil from frying the balut) into the pan. Wait for the oil to heat up, then add 1 teaspoon of minced garlic and sauté until fragrant.
Next, add 1 teaspoon of minced shallots, 1 tablespoon of sugar, and 1 tablespoon of fish sauce to the pan, then stir evenly until the ingredients are completely dissolved.
After that, add 1 tablespoon of water to the pan and cook until the mixture boils. When the mixture has boiled and thickened, reduce the heat, add the fried balut, and stir evenly to soak in the sauce.
Finally, add chopped green onions to the pan, stir once more to complete.
