  • High-quality garlic has cloves that are off-white in color, and the outer skin should be intact.
  • Additionally, you should observe the bulb’s stems; if they are plump, not too dry, and not wrinkled, then it is good garlic.
  • Avoid buying garlic with stems that have turned gray or yellow, as they have mostly lost the characteristic aroma of garlic.

  • Prepare the pork chop

    To reduce the unpleasant smell, wash the pork chop with diluted salt water, then rinse 2 – 3 times with clean water and let it drain.

    Next, to allow the seasoning to penetrate evenly into the meat, place the pork chop on a cutting board and use a pestle or meat tenderizer to pound the meat.

    • Method 1: Blanch the pork chop in boiling water for about 3 – 5 minutes, then rinse with clean water to eliminate the smell.
    • Method 2: Use a mixture of salt and white wine to rub on the pork chop for 5 minutes, then rinse 1 – 2 times to see immediate results.
    • Method 3: Additionally, soaking the pork chop in rice water for 15 minutes is also a very popular method.

  • Marinate the pork ribs

    Prepare a mortar and add 8 cloves of garlic, use a pestle to crush them so that the skins can be easily removed. Next, take out the garlic skins, and at the same time, add 2 teaspoons of ground pepper into the mortar and proceed to grind the mixture into a paste.

  • Fry the meat

    Place a pan on the stove with 4 tablespoons of cooking oil over medium heat. When the oil is gently bubbling, add 500g of marinated pork loin ribs and fry for about 7 – 10 minutes.

    When you see some of the meat juice in the pan reduce, and the meat starts to turn golden and release a fragrant aroma, lower the heat and turn the meat to fry the other side for another 5 – 7 minutes, until the meat is evenly golden on both sides and the sauce thickens, then turn off the heat and serve on a plate.
