Durian 1 fruit Condensed milk 200 gr Unsweetened fresh milk 200 ml (or pasteurized milk) Small ice cubes 500 gr White salt 1/2 cup

How to make Durian Bingsu

  • Prepare the ingredients

    Peel and deseed the durian, take the flesh out and place it on a plate, then put it in the refrigerator. Be careful to handle the durian segments gently to avoid crushing them!

  • Make durian ice cream mixture

    Pour 200 ml of unsweetened fresh milk into a jug, take 1 durian segment, remove the seed, crush it in a small bowl and add it to the jug, then add 150 g of condensed milk, and use a spoon to stir until the condensed milk dissolves with the fresh milk and durian.

    Next, put the milk mixture into a plastic bag, then tie the top of the bag or you can put the mixture into a zip bag and zip it up.

  • Freeze

    You can choose to freeze the milk mixture in 2 ways:

    Method 1:

    • Place the bag containing the mixture in the freezer for 4 hours.
    • After taking the mixture out of the freezer, use a pestle to crush it and put it into a bowl.

    Method 2:

    • Put the bag containing the mixture into another bag (plastic bag or zip bag), then add 500 gr of ice cubes combined with 1/2 cup of salt around the outside of the milk bag.
    • Next, tightly tie the bag and shake it for 5 minutes; the milk mixture will freeze, then transfer it to a bowl.

  • Final product

    The sweet and light flavor of the milk combined with the rich creaminess and strong aroma of each layer of durian flesh will make your throat melt from the very first spoonful. Let’s enjoy the result and chase away the heat, refreshing your summer flavor.

Tips for making delicious dishes:

  • You can add crushed roasted peanuts, or almonds, cashews, chocolate sauce to make your bingsu more delicious and visually appealing!
