How to choose fresh rice frogs

  • Currently, there are 2 types of frogs that are widely sold, namely wild frogs and farmed frogs.
  • However, regardless of which type you use, you should pay attention to buying live frogs, as the flavor of the frogs will diminish if you use frozen or pre-processed ones because it’s very hard to check the freshness of the frogs.
  • In addition, you should buy frogs that are large in size and observe that the outer skin has a brownish-yellow color.
  • Avoid choosing frogs that feel too soft and mushy when pressed lightly, lack elasticity, especially if they are mushy, as this is a sign that the frogs have been kept for a long time, which can affect health.

  • Preliminary Processing of Frogs

    First, after purchasing the frogs, you need to remove the heads, while peeling off the skin and removing all internal organs. Next, take some salt and rub it on the surface of the frogs for 3 – 5 minutes, then rinse several times with clean water and let it drain.

    • Step 1: First, when buying frogs, you should carefully remove parts such as the head, skin,… and especially any remaining blood! Depending on preference, you can leave the frog skin on or not; if you keep it, be sure to wash it thoroughly!
    • Step 2: Next, you can use a mixture of wine and ginger or vinegar and salt to wash the frogs for 3 – 5 minutes.
    • Step 3: Finally, briefly blanch the frog meat with wine, ginger, and turmeric powder for 5 minutes, and you will see immediate results.

  • Marinating the frog

    Put the frog into a bowl and marinate with a mixture of spices including: 2 tablespoons of sugar, 1/2 tablespoon of salt, 1/2 tablespoon of chili sauce, 1 tablespoon of Mai Quế Lộ wine, then mix well and let it sit for about 1 hour for the frog to absorb the spices.

  • Drying

    Arrange the frogs evenly on a tray, take them to a sunny place and dry for about 3 – 4 days until the frog meat is evenly dried on all sides and can be used.

    The dried frog after completion has a beautiful reddish-brown color along with an alluring aroma from chili and Mai Que Lo wine. With this dried dish, you can take it to fry, braise,… to better appreciate the flavor!

How to preserve dried river frog

  • After drying, you can wrap the frogs with moisture-proof paper and place them in a tightly sealed plastic bag or wrap them in several layers of newspaper, then use a plastic bag to seal them tightly. About once a week, you should expose them to sunlight again to prevent mold. Store them in a dry, cool place, and in this way, dried frogs can be preserved for 1 to 2 months.
  • If you want to preserve dried frogs for a longer time, you should use a plastic bag to seal them and place them in the refrigerator’s cool or freezing compartment of the refrigerator.
  • Dried frogs stored in the refrigerator can last longer, about 6 months, without reducing quality.
  • If the dried frogs are vacuum sealed, they will be preserved well as it prevents bacteria from entering. At the same time, do not store them together with other fresh products to avoid contamination and quicker spoilage.
