How to prepare Dried Snakehead Fish

Prepare the Snakehead Fish
To clean the slime off the fish and eliminate the fishy smell, you need to scale it thoroughly and remove all the internal organs. Then rinse it several times with water.
Cut along the fish’s backbone to remove the bones, scraping off any blood vessels. Rub the fish with 2 teaspoons of salt.
After cleaning and deboning, the fish will weigh about 600g. Marinate it with 2 tablespoons of white wine, mixing it evenly with the wine for about 5 to 10 minutes. Then, drain the fish in a colander, and no need to rinse with clean water.
Tip:
- Using white wine will help eliminate the fishy smell, preventing flies from landing on it during drying.
- All internal organs should be removed so that the drying process yields better results and allows for longer preservation.

Prepare the fish marinade mixture
