  • Next, choose fruits that feel firm when held, with green and fresh stems tightly attached to the fruit, as these are usually newer fruits, and will taste sweeter when eaten.
  • Avoid choosing fruits with wrinkled skin, stems that are light yellow and dry. These are fruits that are older or have been stored for a long time, and will taste bland and not delicious.

  • Gently shake the egg and hold it close to your ear; if you don’t hear the egg moving inside, it indicates that this is a fresh egg.
  • On the contrary, you should avoid eggs with a smooth shell, light color, or those that make noise when shaken, as these are eggs that have been stored for a long time or are damaged inside.

How to make Fried Eggplant

  • Prepare the eggplant

    Prepare a bowl of clean water, then add 1 teaspoon of salt, and stir well until the salt fully dissolves. Wash the eggplant, cut off the stem, and then use a knife to cut the eggplant into round slices about 1/2 finger thick.

    Put the sliced eggplant into the bowl of diluted salt water to soak for about 5 – 10 minutes to prevent the eggplant from browning, then remove the eggplant to a basket and let it drain.

    Next, use a spoon to scoop out the eggplant flesh, then use the knife to chop the eggplant flesh into small pieces and place it on a plate.

    If you buy pork belly and grind it at home, first soak the meat in diluted salt water for about 5 minutes, then rinse it thoroughly and let it drain.

  • Making egg meat filling

    Add the mixture of carrot, onion, coriander, and finely chopped eggplant into the bowl of minced meat, then crack in 2 eggs. Season the mixture with: 1 teaspoon of ground pepper, 1/2 teaspoon of monosodium glutamate, 1 teaspoon of sugar, 1 teaspoon of seasoning powder, and 1 tablespoon of cooking oil.

    Place a pan on the stove, add 3 tablespoons of cooking oil to the pan, and turn on medium heat. Wait for the oil to heat up, then add the eggplant slices that have had their insides removed.

    Next, use a spoon to scoop the prepared meat filling into the eggplant slices and fry on medium heat. After about 3 minutes, turn them over to fry until both sides are golden brown. Finally, remove the eggplant to a plate and turn off the stove.
