Prepare the eggplant
Prepare a bowl of clean water, then add 1 teaspoon of salt, and stir well until the salt fully dissolves. Wash the eggplant, cut off the stem, and then use a knife to cut the eggplant into round slices about 1/2 finger thick.
Put the sliced eggplant into the bowl of diluted salt water to soak for about 5 – 10 minutes to prevent the eggplant from browning, then remove the eggplant to a basket and let it drain.
Next, use a spoon to scoop out the eggplant flesh, then use the knife to chop the eggplant flesh into small pieces and place it on a plate.

Prepare other ingredients
If you buy pork belly and grind it at home, first soak the meat in diluted salt water for about 5 minutes, then rinse it thoroughly and let it drain.
