All-purpose flour 200 gr Yeast 4 gr Unsalted butter 50 gr Chicken egg 1 piece Unsweetened fresh milk 70 ml White sesame A little Sugar 30 gr Salt 1/4 teaspoon

  • Mixing the dough

    Gradually add to the bowl: 1 chicken egg, 4g yeast, 30g sugar, and 60ml unsweetened fresh milk. Use a ladle to mix the mixture until the sugar is completely dissolved.

    Then add all the flour and 1/4 teaspoon of salt into the bowl and continue mixing until the dough sticks together into a soft mass.

  • Kneading the dough

    After mixing the dough into a soft mass, transfer the dough to a large tray for kneading. Use the part near your wrist to press down hard and push the dough away.

    Knead continuously like this for about 5 minutes, then add 50g unsalted butter and continue kneading until the butter is incorporated into the dough.

    Continue kneading the dough for another 15 – 20 minutes until the dough is chewy, soft, smooth, and no longer sticky to the hands.

  • Proof the dough

    After kneading, place the dough in a clean and dry bowl. Use plastic wrap to cover the bowl tightly and let the dough rise for about 1 hour until it doubles in size.

    After the dough has proofed for the right amount of time, transfer it back to a tray and knead it lightly for about 1 minute.

    Then use your hands to divide the dough into equal small portions, cover the dough with a large, clean cloth, and let it rest for another 10 minutes before shaping the bread.

    The dough after resting for 10 minutes can be shaped by hand according to your preference. After shaping, cover the dough with a cloth and let it rise for another 30 minutes before baking.

    After 30 minutes of rising, continue to brush a layer of unsweetened milk on the surface and sprinkle a little white sesame, then place the bread on a baking tray lined with parchment paper.

    While brushing milk on the bread, preheat the oven to 180 degrees Celsius for about 5 minutes before placing the bread inside. Bake the bread at 160 degrees Celsius for about 10 minutes until the bread is evenly golden, then open the oven, take the bread out to cool.
