  • Prepare the snails

    After buying the snails, put them in a basin of water, wash them thoroughly 3 – 4 times, then cut off the tail of the snail. After cutting, wash them again with water several times until clean, then take the snails out and place them in a basket to drain. You can also wash the snails with rice water or diluted salt water.

    Note: You need to cut off about 1/2 of the snail’s tail so that you can suck out the snail meat to eat!

  • Prepare other ingredients

    After purchasing, pick the sprouts and leaves of the Vietnamese coriander, wash them clean with water, and let them drain. Remove the stems from the chili peppers, peel the outer layer of the lemongrass, wash it with water, and then slice it thinly. Peel the garlic and mince it finely.

  • Make coconut snail stir-fried

    Place a pot containing about 130ml of water on the stove, cook on high heat until the water boils, then add the packet of coconut milk powder and stir well.

    In the meantime, place a pan on the stove, add 3 tablespoons of oil to the pan. Wait for the oil to heat up, then add all the garlic and lemongrass to sauté until fragrant.

    Next, add the snails and stir them for about 3 minutes, then add a packet of unsweetened fresh milk (220ml), the coconut milk mixture just cooked and 40gr of condensed milk into the pan.

    Stir-fry the snails on low heat for about 3 minutes until cooked, then add the ingredient mixture including: sliced chili, 1/2 teaspoon of salt, 3 teaspoons of sugar, 1/3 teaspoon of monosodium glutamate, stir well and wait for the snail pan to boil for another 5 minutes, then season to taste and turn off the heat.

How to choose dried coconuts for coconut milk

  • You should buy dried coconuts that have old flesh. You can press the coconut flesh with your hand or scratch the coconut shell near the stem; if the flesh is hard to press, difficult to press, or scratching does not peel the shell, it indicates that it is an old coconut.
  • If you see the coconut flesh is dry, thick, hard, close to the shell, and has a dark brown color or many bumps on the outside, you should buy it.
  • You can also lightly tap the coconut; if you hear a dull sound, it indicates that the coconut is still young with thin flesh. Conversely, if you hear a clear sound, it is an old coconut with thick flesh, and you should choose it.

  • Prepare the snails

    After buying the snails, soak them in water to clean off the mud and sand. Then, cut off the end of the snails and rinse them with water until clean, then drain.

    Place a pot on the stove, add about 500ml of filtered water and 2 stalks of chopped lemongrass into the pot, after the water boils, pour the snails in and boil for 5 minutes, then turn off the heat, and pour the snails into a basket to drain.

    You slice the remaining 3 stalks of lemongrass thinly, peel and finely chop 3 cloves of garlic. For 1/2 a ginger root, you peel it, cut it into strips, and finely chop 2 chili peppers after removing the stems.

    To extract coconut milk, you cut a dry coconut in half, scoop out the flesh, and squeeze it to get the milk. Use a sieve or a clean cloth to filter it 2 – 3 times to completely remove the coconut pulp.

    Place a pan on the stove, add 2 tablespoons of cooking oil. Once the oil is hot, add the sliced lemongrass, ginger strips, and finely chopped garlic and chili, stir-frying until golden and fragrant.

    Next, add 2 tablespoons of condensed milk and coconut milk to the pan, turn the heat to low, then season with 1 tablespoon of fish sauce and 1 tablespoon of seasoning. You can adjust the seasoning to suit your family’s taste.

    When the sauce starts to simmer, add the snails and sauté for another 10 minutes until the snails are well-coated with coconut milk. When the coconut milk has reduced a bit, turn off the heat, plate the snails, and enjoy with the family.
