Prepare the Fish
After buying the fish, scale it, remove the fins, and the internal organs. To clean the fish of slime, rub salt all over the fish and rinse it several times with water.
Use a knife to fillet the fish and separate the skin. Cut the fish meat into thin slices, chop the fish bones finely, then put them in the blender and blend until smooth.

Prepare other ingredients
Peel the galangal, wash it clean, slice it thinly, and pound it in a mortar.
Slices of lemongrass and chili. Peel the shallots and mince them finely.

Make the dipping sauce for fish salad
Add the ground fish bones to a pot, then add 1 tablespoon of fermented rice, 1 teaspoon of shrimp paste, 2 teaspoons of seasoning powder, 5 teaspoons of sugar, sliced chili, 1/3 of the minced galangal, 2 teaspoons of monosodium glutamate, and 1 tablespoon of fermented rice, and mix well.
Heat a pot on the stove with 1 tablespoon of cooking oil, then add minced shallots and sauté until fragrant.
Next, add the mixed ingredients and stir well, simmering on low heat for about 2 – 3 minutes.

Roast galangal
Add 1/3 of the galangal to a pan and roast over medium heat for about 5 minutes until golden brown.

Mixing the salad
Squeeze the juice from the remaining galangal and add it to the sliced fish, then add 2 tablespoons of lime juice, mix well, and marinate for 20 minutes to let the fish absorb the seasoning.
After that, squeeze out the excess liquid to dry the fish. Add 1/2 teaspoon of salt, 1/2 teaspoon of pepper, the roasted galangal, lemongrass, and 5 tablespoons of roasted rice powder, mix well, and adjust the seasoning to taste, and it’s done.
