Place a pot on the stove with 200ml of water over high heat. Once the water boils, add 7 dried shiitake mushrooms, then reduce to medium heat and boil for 30 minutes.
When the mushrooms are soft, turn off the heat, remove them and rinse several times with clean water, while squeezing them hard with your hands to clean the shiitake mushrooms better. Then, use a scissors to cut off the stems, and then dice with a knife.
For the green peas, remove the ends, wash them clean, drain, and then finely chop them.

- Method 1: Soak dried shiitake mushrooms in water for about 1 – 2 hours, then rinse with clean water and drain to prepare.
- Method 2: Additionally, to save time preparing dried shiitake mushrooms, you can soak them in warm water at about 60 – 80 degrees Celsius for 30 – 60 minutes.

Fried Rice
Once the ingredients are prepared, place a pan on the stove with 2 tablespoons of cooking oil over high heat. When the oil is hot, add 4 bowls of white rice and 2 beaten eggs, using a spatula to stir well and fry for about 5 minutes.
Next, add 1/2 tablespoon of soy sauce, 1/3 tablespoon of salt, 2 teaspoons of sugar, and 1/2 teaspoon of ground pepper, then continue to stir-fry for another 3 – 5 minutes.
Finally, add 1 tablespoon of oyster sauce, stir well again, then season to taste, turn off the heat, and serve on a plate.
Tip: To avoid the rice becoming too dry, do not stir-fry for too long. -

Next, place another pan on the stove with 3 tablespoons of cooking oil over medium heat. When the oil is gently bubbling, add all the shrimp, scallop meat that has been prepared, and 100ml of water, using a spatula to stir well and stir-fry for about 3 – 5 minutes.
Then, add 1 teaspoon of chicken seasoning, 1 tablespoon of oyster sauce, and the drained green peas, and continue to stir-fry for another 5 – 7 minutes.
When all the ingredients are tender, season to taste, then add 1 tablespoon of diluted tapioca starch along with 2 tablespoons of water, and continue to stir-fry for 3 minutes.
When the mixture has thickened and is smooth, turn off the heat and serve it with the fried rice from earlier, and it’s ready!
