How to choose delicious gac
- Large, round gac fruits with evenly spaced spines, bright red color, and intact stems are usually good gac; you should prioritize buying these!
- You should buy gac fruits that feel heavy when you hold them and are slightly firm when pressed. This is a sign of ripe and delicious gac, so pay attention to this point!
- Avoid choosing damaged gac fruits because air can easily penetrate the flesh, and they will spoil within just one or two days.
- Additionally, if the skin of the gac is unevenly soft and hard or the stem is wilted, you should also avoid buying them as they may have been stored for too long and are no longer fresh.

How to make Gấc rice cake

Making the cake crust
First, add 200g of glutinous rice flour and 20g of regular flour along with 50g of gấc meat into an bowl. Then, pour in 150ml of warm water and stir well with 1/2 teaspoon of salt and 1/2 teaspoon of sugar.
Next, knead the dough into a smooth, elastic mass until it no longer sticks to your hands. Finally, wrap the dough tightly with plastic wrap and let it rest for 20 minutes.
With 100g of sweet potato, after purchasing, peel it clean, wash it with water, and let it drain. Then cut it in half into round slices and cook with 250ml of clean water for about 15 minutes over high heat until the sweet potato is tender.
Mix the 100g of cooked sweet potato evenly with the rested dough until everything is well combined.
Tip: You should gradually add water to the dough to avoid making it too wet! -
Making the filling
For mung beans, rinse 150g of beans and put them into a pot with 500ml of clean water and boil over high heat.
When the beans start to boil, reduce the heat to low, cover tightly, and cook for about 10 – 15 minutes.
Once the mung beans are cooked, add 1 teaspoon of cooking oil, 3 teaspoons of sugar, and 1 tube of vanilla, and mix well over medium heat. Continue stirring the mixture until the water evaporates and the mung beans become thick.

Shaping
Divide the dough into equal parts and roll them into balls. Next, flatten the dough, place the mung bean filling in the center, pinch the edges tightly, roll into a ball, and gently flatten the cake.
Then, sprinkle some sesame seeds on the outer layer of the cake. Do the same until you finish the remaining dough and filling!

Frying the cake
Put a pan on the stove with about 200ml of cooking oil and heat it over medium heat. When the oil starts to shimmer, add each cake to fry. Fry the cake over medium heat until the outer layer is evenly golden.
Next, place a pan on the stove, add 7 tablespoons of sugar, and 20ml of water. Use chopsticks to stir well over low heat until the sugar thickens slightly. Finally, add the cakes and toss them evenly so that the sugar coats them well.
