How to Choose Good Taro
- Size: Choose tubers that are medium-sized, not too large or too small.
- Shape: Choose tubers that are evenly rounded, egg-shaped, with rough skin, many roots, and soil clinging to the skin.
- Color: Choose taro with a skin that has many eyes, and the flesh inside should have many purple veins, indicating that the taro will be delicious and not tough; if the outer skin is smooth, it is often tough.
How to make Fried Taro Cheese Cake

Boil taro
First, you peel the taro and sweet potato and wash them thoroughly. Then, cut the taro into small pieces and steam them until soft for about 15 minutes.
Tip for peeling taro without getting itchy hands
- Leave the dirt on the taro skin and use dry hands to peel it. Then soak the taro in diluted salt water for 10 minutes before processing.
- Note that during the soaking process, you should not put your hands directly into the taro.
- Wear gloves to peel the skin.
- If you happen to get itchy from peeling the taro, you can hold your hands over the fire, soak them in saltwater mixed with lemon juice, or crush green banana leaves and apply them to the itchy area for about 10 minutes to reduce the itchiness!

Mash the taro
Put the steamed taro into a bowl, then use a fork to mash the taro until smooth.
Small tip: Mashing the taro while it’s still hot will make it easier and the taro will be smoother. -
Mix the cake batter
Add 50g of tapioca flour, 50g of wheat flour, and 50g of sugar into a new bowl and mix well.
Next, pour the mixture of flour into the bowl of taro and continue to mix until well combined.
Then, add 20ml of cooking oil and use your hands to knead the dough until it forms a smooth, non-sticky mass.

Shape the cake
Place the dough on the table, roll it into a long shape, then use a knife to cut it into equal parts.
After that, roll each piece into a ball, use your hands to create a dent in the middle, place a piece of cheese inside, and pinch the edges of the dough to seal it.

Fry the cake
Prepare a bowl of breadcrumbs and a cup of plain water.
First, roll the cake through the cup of water, then roll it evenly in the bowl of breadcrumbs.
Heat oil in a pan, when the oil is bubbling, add the cake to deep fry and turn it regularly over medium heat for about 8 minutes until the cake is golden brown.
Tip: To make the cake crispier, you should use more oil or increase the amount of glutinous rice flour in the cake. -
